We practice only low-impact, holistic farming methods in our Demeter Certified Biodynamic Vineyard. We are confident these practices are the best way to capture the true essence of the soil in our fruit and ensure health of our vines and the unique accent of our terroir for generations. This philosophy is carried into the cellar, where Demeter Certified Biodynamic wine-making practices produce wines with intensity, sophistication and elegance while maintaining a purity of both fruit and earth.

Pair with dishes that utilize slow braised meats, something with complex layers of spices and caramelization, as the mid-palate is ensorcelled with lively acidity and don't forget those tannins!

Monzio Compagnoni Franciacorta Saten Brut Millesimato

Color: very deep golden yellow, often, with very abundant froth and persistent perlage of great finesse.

Scent: it has a rich spectrum of scents, it is enveloping and almost greasy without any cloyingness; there are sensations of vanilla, biscuit, licorice, anise.
Taste: in perfect correspondence with the nose, even the taste is full, rich, generous, juicy; all well balanced by an acid base that allows the sweet sensations (of ripe fruit) to express themselves without tiring the palate

The name "Saten" means Silk.

The name "Franciacorta" comes from a phrase in the 1100-1200’s for tax exempt. The phrase is "Franzacurta”….referring to tax exempt status of some local towns in Lombardy, Italy. Franziacorta became a DOC in 1967 and was granted the DOCG status in 1995. There are 2000+ hectares (5,400 acres) total for the appellation with over 100 producers. Total production for the DOCG is around 550,000 cases.

Mordoree Chateauneuf-du-Pape La Reine des Bois is made from 80% Grenache, 10% Mourvèdre, 5% Syrah, 2.5% Vaccarese, 2.5% Counoise.
Aged in 50% oak barrels.
Deep ruby red color, red fruits aromas leading to leather, black truffles and coffee notes. Fat and concentrated on the palate, with liquorice and dark fruit flavors.
Pairs well with game and red meats, cheeses.

"The flagship is the 2018 Châteauneuf Du Pape La Reine Des Bois and it’s 80% Grenache, 10% Mourvèdre, 5% Syrah, and the rest a mix of permitted varieties. Aged 20% in old barrels (this was raised in new barrels in the past) and the rest in stainless steel, it’s more backward and closed compared to the Voyageuse release and has ample blackcurrants, smoked earth, graphite, and peppery garrigue aromas and flavors. Medium to full-bodied, balanced, and textured on the palate, it has solid underlying structure yet still plays in the balanced, charming, elegant style of the vintage. It’s beautifully done and certainly up with the top wines. It should drink nicely for 10-15 years."

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

The Special Club concept started in 1971. A dozen wine growers from some old families of Champagne had an idea to familiarize people with the originality of the “Champagne de Vigneron” (Champagne of wine grower), thanks to prestigious vintages.

In the beginning, they created an association called the “Club des Viticulteurs Champenois” and chose a bottle with a special shape, created exclusively for them & used only by then. In 1988, they changed the bottle and the label. In 1999, the Club changed its name to “Club Trésor of Champagne.”

The Club Trésors comprises 28 artisan wine makers, selected from the finest areas of the Champagne region, each one recognized for the quality of their work. The Club Trésors is the only organization in Champagne to select its members according to a set of unrelenting quality standards:

• Each wine maker must make their champagnes entirely in his, or her, own premises and cellars. Furthermore, the champagne must be made exclusively from grapes harvested in his, or her, own vineyards.
• Each wine maker is devoted to his work and passionately protects the quality and the unique character of his own terroir.
• The jury of oenologists and wine professionals who select the champagnes demand irreproachable quality in both the work in the vineyard and the wines.
• Each champagne is subject to two blind tastings (once at the still wine stage before bottling and again after 3 years ageing in bottle) by a panel of passionate and distinguished oenologists and wine makers. 4 years aging minimum is required.
• A Special Club champagne may only be made in outstanding vintage years.

Roland Champion's Special Club selection has rich and structured aromas. Very pleasant and generous roundness, nice length in mouth. Golden color with buttery and fruity aromas. All the expression of a magnificent terroir for your most pleasurable moments.

TASTING NOTES: This fresh, subtle Honjozo has a lovely nose of cantaloupe, leek, fresh clay and pear. With just a hint of sweetness, the palate is light bodied with alluring flavors of burnt caramel, chalk and marsh-mallow and a classic Honjozo clean, dry finish.
The fanciful name "Otoko no Yujyo", represents a feeling for which the sake was made, to honor brotherly love, between comrades.

Vineyard Notes

The House of Trouillard has incredible holdings on the Côtes de Blancs. The vineyard's rating average 94-95, just one of the reasons the Blanc de Blancs has such incredible raciness and elegance. It is a Cuvée of eleven different Crus in the Reims Mountain, the Côtes de Blancs and the Sézannaise region and is the specialty of the house.

Trouillard Blanc de Blancs Brut NV is made of 100% Chardonnay with a green-gold color, characteristic of Chardonnay, and with fine persistent bubbles. This wine has an aroma that jumps out of the glass and is very inviting. On the nose there are seductive scents of warm almond croissant and honey, lightened by some floral notes. Crisp and refreshing in the mouth and lively with a very refined fruitiness and a touch of smokiness typical of wines from the Côtes des Blancs. The elegance and subtlety of the Chardonnay are to be especially appreciated as an aperitif, and nicely accompanies shellfish and fish. 
It has become the favorite of those who know Champagne Trouillard.

This all Chardonnay Champagne is sourced from eleven different crus. It offers a fragrant bouquet of orchard fruit with hints of toasted grain and lemon zest. Franz Prager, co-founder of the Vinea Wachau, had already earned a reputation for his wines when Toni Bodenstein married into the family. Bodenstein’s passion for biodiversity and old terraces, coupled with brilliant winemaking, places Prager in the highest echelon of Austrian producers.

Smaragd is a designation of ripeness for dry wines used exclusively by members of the Vinea Wachau. The wines must have minimum alcohol of 12.5%. The grapes are hand-harvested, typically in October and November, and are sent directly to press where they spontaneously ferment in stainless-steel tanks.

Light greenish yellow, silver reflections. Fine savory, delicate nuances of anise, tobacco notes, delicate yellow fruit, a touch of mango and honey blossom. Full-bodied, juicy white apple fruit, well-integrated, silky acidity structure, finesse and long persistence, saline finish, lingers for minutes, Veltliner at its best.

Clos Du Val Yettalil is a Bordeaux blend of Cabernet Sauvignon with Merlot, Cabernet Franc, Petit Verdot and Malbec

The 2019 Yettalil opens with aromas of fresh blackberry, ripe plum, and racy cassis layered with hints of violet, bay leaf, and thyme. Beautifully balanced and elegant on the palate, vibrant acidity and polished tannins give way to a concentrated core of black cherry, vanilla, and cedar. The texture is velvety and plush with a backbone of graphite and dark chocolate that lingers through a long finish.

Review:

The 2019 Yettalil is a blend of Cabernet Sauvignon, Merlot, Cabernet Franc, Petit Verdot, and Malbec. Deep garnet-purple in color, it charges out with energetic notes of crushed black and red currants, warm black plums, and black raspberries, plus suggestions of cedar, violets, and Indian spice with a waft of tree bark. The medium to full-bodied palate is lively and well-structured, featuring firm, ripe tannins to frame the muscular fruits, finishing on a lingering fragrant earth note.

Landes Caprices d'Anais Rose is made from 50% Merlot + 50% Cabernet Sauvignon

This cuvée was created in 2005 to honor Nicolas's first daughter Anais. Caprice d'Anais means "Anais' Whim".

Color: Pale pink with salmon hues. 
Aromas: quite aromatic nose dominated with floral (linden and elderberry) and fruity (cherry, strawberry and raspberry) notes. 
Flavors: Quite similar to the aromas, with red fruit and floral flavors. The wine is easy to drink with a good fresh and zesty finish.

Great on its own during summer time, it will also pair very well with grilled salmon, salads, roasted chicken or any white meat dish.

Color: deep dark ruby intense color
Aroma: racy and aromatic nose with aromas of ripe red fruit, floral notes, wood and spice with a touch of vanilla.
Taste: this wine has a good structure and some powerful aromas of raspberries, blackcurrant, vanilla and it is powerful with a complex finish. The oak is present but not dominant. The tannins are quite well integrated already.

Average age of the Vines: 60 years Yield : 50 hectoliters / hectare. Grape picking: harvest by machine. Vats: Stainless steel thermoregulated and computerized. Fermentation: 45 to 50 days with a final 35°C warm steeping. Winemaking: Malolactic fermentation in new oak barrel. Ageing: 16 months in new French Oak barrels from Allier and Limousin. Landes Grand Heritage Lussac Saint Emilion is made from 100 percent Merlot.

First vintage of this wine was 2010 to pay tribute to the founding father of Chateau des Landes - Paul Lassagne. He gave the family a great legacy of terroir, passion and know-how to craft this great cuvee produced from a selection of the finest grapes that are vinified and aged in 600 liter French oak foudres, just like it was done in the old days. The resulting wine is complex and aromatic offering bold aromas and flavors of dark berries, floral tones, spice, oak and vanilla. The palate is onctuous and powerful, well structured with ripe tannins. Well balanced and a complex finish. 

Average age of the Vines: 60 years Yield : 50 hectoliters / hectare. Grape picking: harvest by machine. Vats: Stainless steel thermoregulated and computerized. Fermentation: 45 to 50 days with a final 35°C warm steeping. Winemaking: Malolactic fermentation in new oak barrel. Ageing: 16 months in new French Oak barrels from Allier and Limousin. Spring and summer characterized by little rain, only some rain showers in July and late August avoided the hydric stress of the vines. The vegetative cycle of the vine developed with big variations of temperatures, alternating warm and atypical low temperatures of 4ºC for mid-June. The ripening of the grapes happened under very good conditions and the harvest started on 24th September 2019.  

Grape origin

100% Tinto Fino (Tempranillo) primarily from very old vines – 60 to 90 years old – from selected plots in La Horra and La Aguilera. The harvest was done by hand, in small boxes of 15 kilos that are thoroughly inspected, bunch by bunch, on the selection table.

Lots of depth here, with ripe blackberries and some nicely baked black cherries, roasted herbs, incense, dark spices, mussels and a balsamic tinge. An admirably fine dollop of tannins on the palate, which are immaculate and juicy, as they thoroughly dunk into the black fruit, melting into a persistent finish that lasts for over a minute. Very impressive. Drink or hold.
