Kershaw Chardonnay Deconstructed Lake District Cartref CY96 is made from 100 percent Chardonnay.

Sourced from the western part of Elgin, known as the Lake District, this clone produces wines that are nervous, aromatic, elegant and sharp with slightly lower alcohol and finely balanced, the fruit profile being subtle with hints of citrus/orange peel and peach blossom and with time, some nutty elements. The Cartref soils, a mixture of decomposed granite, pebbles and quartz, adds delicacy and heightens the fruit intensity.

The inspiration for my Deconstructed Chardonnay stems from my belief that the Elgin region boasts credentials that make it world-class. To bolster these regional credentials, I have set out to prove that Elgin has both a signature grape, as well as specific ‘terroirs' (meso-climates) that reflect intra-regional distinctions. To fully comprehend this, it is necessary to dig deeper into the DNA that make up our region. To elucidate this, I have decided to make these 3 Chardonnay wines, each selected from a specific vineyard and an individual clone. Importantly, this is an ongoing story that will unfold over the coming years.

Laurent-Perrier Grand Siecle No. 26 is a blend of 58% Chardonnay, 42% Pinot Noir

 white gold in color with delicate and persistent bubbles, Grand Siecle No. 26 offers a very complex nose which mixes honeysuckle, lemon, clementine and fresh butter aromas, followed by notes of hazelnut and a touch of honey. The feel in the mouth is very delicate and fresh with candied lemon and fresh hazelnut aromas. The palate is silky and mineral with notes of honeysuckle, flaked almonds and clementine.

It pairs with high quality produce and refined dishes, including shellfish, noble fish and white meats such as Thai style langoustine tartare and fine roasted poultry.

Since 1959, Grand Siècle has been revealed only 26 times in bottle format and 23 times in magnum.

The « Grand Siècle » (Great Century) is the name given to one of the most prosperous periods (17th century) in the history of France known for the capacity of man, through his works, to create what nature cannot. Louis XIVth, known as the « Sun King », by creating the « Château de Versailles » and its gardens, was the architect of this model of harmony, balance and perfection.

The symmetry and perspective of the « Jardins à la française », the capacity to grow Mediterranean fruits (especially Oranges inside the « Orangerie ») in such a Northern climate, creating the Grand Canal, the fountains and ponds with no nearby rivers are many illustrations of this ability of man to sublimate natural elements. The name of Grand Siècle was chosen for Laurent‑Perrier’s Prestige Cuvée based on this common vision to reach a perfection that Nature, on its own, cannot provide.

This is really something. Electric on the palate. The aromas are so complex with sliced fresh and dried ginger, subtle pie crust, tarte tatin and hints of nutmeg with some salted caramel. Toasted bread, too. Always subtle. The palate is full- to medium-bodied yet hemmed-in with a freshness and balance that draws you back. Savory and vibrant. It's full of energy. Spectacular. Luis Canas Reserva Seleccion de la Familia Rioja is made from 85% Tempranillo and 15% Cabernet Sauvignon

The “family reserve” from one of Rioja Alavesa’s most enduring family-run wineries. Wines destined to be the Reserva de la Familia label are made from a selection of grapes from old vines, those which combine a series of characteristics such as good orientation and exposure to the sun, and a poor soil which ensures low yields.

This wine is one of very few Rioja wines to blend Cabernet Sauvignon with Tempranillo. Bodegas Luis Cañas was granted permission by the D.O.Ca. to plant this variety as an experiment in the early 1980s.

Tasting notes
A brilliant garnet color with cherry hints on the edges.
The nose offers a complex variety of aromas that combine to bring an intense and sophisticated wine. Initially we can find very ripe berry fruits, smoky notes, raisins and liquor. After a certain amount of aeration, the cinnamon and jam notes appear and, with a little more time, the roasted and spiced aromas are noticed more clearly.

The palate is full, with a good presence of tannins, although these are offset by the glycerine like character, resulting in a fleshy sensation. Long lasting and lingering finish.

Winemaking and aging:
The grapes were cold macerated for 72 hours upon arrival at the winery. They underwent fermentation at 26º C in sealed cement tanks under constant thermal control, with the must pumped over daily. With the paste devatted by gravity, spontaneous malolactic fermentation took place after 45 days.
The wine was aged for 20 months in 50% medium toasted American and 50% French oak barrels. The barrel ageing not only adds tannins from the wood, but stabilizes the wine naturally. After the final racking, it was clarified in tanks with a small amount of natural egg white, decanted after 30 days and bottled directly without any type of filtration. Because this wine’s evolutionary cycle is quite slow, only corks of the highest quality available were used to ensure that it could be prolonged for several years. 

Milsetentayseis 1076 Ribera del Duero Tinto is made with 95% Tempranillo and 5% other native varieties.

Located in the world-renowned Oakville appellation, in the heart of the Napa Valley, our Cabernet Sauvignon and Cabernet Franc vines benefit from the gravelly and loamy Bale soil derived from an alluvial fan in this warm yet temperate climate. Handcrafted using classical winemaking techniques, this wine is dedicated to Dr. Richard Johnson and Dr. Nancy Hampel who have always demonstrated their kindness of heart. It is ‘Heart of the Valley’ or ‘Cœur de Vallée.’

Deep garnet-purple in color, the ‘Cœur de Vallée’ is characterized by a striking bouquet of lavender and violets over a core of sweet red berries, crème de cassis, Chambord liqueur, blackcurrants and licorice, and com­pelling notes of mocha, espresso, chocolate and forest floor. The 2016 Cabernet Sauvignon Coeur de Vallée comes all from Beckstoffer’s portion of the To Kalon Vineyard and it’s a thrill a minute, offering awesome notes of blue fruits, chocolate, incense, candied violets, and high-class cigar tobacco. As seamless and elegant as they come, yet also opulent and sexy, this remarkable Cabernet Sauvignon could come from nowhere else in the world. Drink it over the coming 2-3 decades.

This is the last vintage when this wine will come exclusively from Beckstoffer’s To Kalon vineyard. In the future it will come (more and more) from Morlet’s own new vineyard in Oakville—just across from To Kalon. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. Full-bodied and laden with densely packed, muscular fruit, it has a rock-solid frame of ripe, grainy tannins and seamless freshness, finishing very long with those To Kalon spices lingering with fantastic persistence. 250 cases produced, to be released in the fall of 2019.

On the Palate of the 2016 Mt. Brave Malbec killer spice overlays rich boysenberry and black currants. A pop of fruit carries across to the finish which is clearly mountain structure based.

Piper-Heidsieck Rare Brut Champagne  is made from 70% Chardonnay, 30% Pinot Noir.

The effervescence of Rare Millésime 2013 is tinged with an intensely bright, light golden color. The nose, at first subtle and clean, emerges in two stages combining tonicity and elegance. It all begins with the delicacy of white flowers, a hint of black tea and touches of citrus, kiwi and kumquat. Then, notes of lime blossom, green tea and fern give way to aromas of white fruits such as greengage plums. Touches of chestnut honey, sweet spices, vanilla and marzipan round off the wine's rich bouquet. The two facets of Rare Millésime 2013 are confirmed in the mouth: smooth and vibrant, indulgent and dynamic. After hints of meringue, whipped cream and marzipan, kumquat, blood orange and kiwi then provide a refreshing tonicity. On the finish, the comforting texture of Rare Millésime 2013 appears as an aromatic and smoky indulgence punctuated by a freshness and a subtle bitterness. Such a pleasingly elegant and multifaceted Champagne with salty, creamy and toasty elements all wound together. Plenty of apricot pastries, pears, brown butter, fennel and salted almonds, with some iodine. It’s silky on the palate, with soft and supple bubbles, while remaining fresh and on edge. 70% chardonnay and 30% pinot noir, from 11 cru villages mostly in Montagne de Reims with Cotes de Blancs.

The nose opens with an initial whiff of creaminess, followed by hints of creamy polenta and tart yet aromatic citrus and chalk. The palate is immediately striking with saltiness and savouriness. The foam is rich and tiny bubbles burst, releasing the citric charm of lemon and white grapefruit. There is something driven, vertical and precise on the taut body, softened by that creamy generosity and subtle oyster shell appeal of the mousse. The finish holds a delicious frisson of white pepper and grapefruit zest spice. A very straight-laced wine for now that will unfold in its long future.

Poggio San Polo Podernovi Brunello di Montalcino is made from 100 percent Sangiovese.

Podernovi, San Polo’s new single vineyard Brunello, makes its debut with the extraordinary 2015 vintage. Crafted with Sangiovese grapes grown in the vineyard synonymous with the wine, it is among the most beautiful and archetypal of Montalcino. Podernovi is an elegant and poignant Brunello.

The winter was not particularly cold, and spring arrived slightly earlier than usual, with temperatures slightly above average, giving the vines’ shoots the opportunity to uniformly develop. The following weeks saw frequent rainfall, which allowed the land to build water reserves, alternating with periods of dry weather, enabling the vines to continue growing without any problems. The damp conditions during flowering led to the formation of bunches that were slightly more sparse than usual and with rather small berries, ideal preconditions for reaching harvest time with perfectly ripe and healthy grapes. However, the feature that will make vintage 2016 particularly memorable is the excellent temperature range that characterized the months of July, August and September, with sunny days and cool, breezy nights. We therefore reached the beginning of October with grapes that exhibited a superb combination of maturity, acidity and aromatic potential, perfect conditions for the production of wines with a distinct personality and a great balance of concentration, elegance and longevity; a perfect reflection of the production philosophy of San Polo.

Delicately perfumed and finessed, the San Polo 2016 Brunello di Montalcino Podernovi is very floral and lifted in personality. This vintage is very different than the inaugural 2015 vintage. I remember the previous release for its darker and blacker quality of fruit. This cooler vintage is more lithe and lighthearted, with building aromatic intensity that unfolds with caution and care. Once you've had the wine in your glass, it reveals a succession of sour cherry, wild rose and fresh lavender bud. There are light mineral dustings as well, and the wine is ultimately quite solid and structured. This bodes well for its aging evolution. Fruit comes from a two-hectare parcel in a cool and high position some 450 meters above sea level. The soils are clayey with schistous Galestro. Production is 13,000 bottles.

Raats MR Mvemve Raats de Compostella is made from 63% Cabernet Sauvignon, 17% Cabernet Franc, 12% Malbec, 6% Petit Verdot, 2% Merlot

The name de Compostella (meaning “field of stars” or “compilation of stars”) was chosen to reflect the fact that each component is crafted to stand alone as a world class varietal wine. The wine exhibits a deep, dark ruby color. Blackcurrant and black cherry fruit with hints of violets, cedar and cinnamon are revealed on the nose. The palate is rich and complex with mineral, blackberry fruit and dark chocolate on the finish. The five Bordeaux varietals harmoniously convene in this consistent, linear flavor profile that is polished with a well-defined finish.

he 2020 De Compostella is composed of 30% Cabernet Franc, 28% Cabernet Sauvignon, 21% Malbec, 16% Merlot and 5% Petit Verdot. Beginning with a focused, juicy and complex nose of dark red fruits, the wine has impeccable balance between oak, fruit and earthy floral tones. Full-bodied and with succulent acidity, the palette offers a firm frame of fine-grained tannins, while the fruit profile makes way for elegant earth and notes of crème de cassis sway with subtle flavors of sage and spiced plum. The 2021 Robert Mondavi Napa Valley Cabernet Sauvignon shows notes of plum, blackberry, licorice, chocolate, violet, and warm spice. Dark plum and black fruit carry through to the palate. Fresh and lively with plush tannins and a polished structure.

Soft around the edges and firm in the middle, this red- and black-fruited wine has a creaminess on the palate, delivering a mix of red cherries, blackberries and blueberries wrapped in moderate tannins. Contains small amounts of petit verdot, cabernet franc, malbec and merlot.

Roland Champion Champagne Blanc de Blanc Grand Cru 2014 is made from 100% Grand Cru Chardonnay from the chalky soils of Chouilly.

This Champagne is full of elegance and finesse. Very complex nose, with a bouquet of aromas dominated by honey, brioche and notes of dried fruits, hazelnuts and sweets. Perfectly matured.

Manual harvest; then pressing immediately to avoid oxidation & preserve quality. Free run juice only. Aged six years on the lees.

Chateau Sainte Catherine Bordeaux Blanc is made from 67% Semillon and 33% Sauvignon (Sauvignon Blanc and Sauvignon Gris).

A clear and brilliant color. The first nose reveals the minerality of our terroir (limestone subsoil). Fruity and delicate aromas come to sublimate this nose in a second time. On the palate, the wine is round and charming with sustained aromas throughout the tasting. (Small red fruits and white flowers).

The 2016 Vigna Spuntali Brunello di Montalcino is the most brooding of the lineup from Val di Suga and is sourced from the southwest of the region on sandy soils. There are aromatics of black raspberry, licorice, menthol, sage, cinnamon, and iron-rich earth. Its Mediterranean influence is felt on the palate with ripe black cherry, dried herbs, and sun-baked earth. This is the fullest bodied and most savory of the Val di Suga lineup, with more roundness and grip. Its structure will benefit from cellaring for several years and will be great drinking over the next 20 years or more. 2026-2040.

The 2015 Vigna Spuntali Brunello di Montalcino is more introverted on first opening, with notes of black plum, licorice, dried Mediterranean herb, and sun-baked earth. On the palate, it offers a tart dried fruit character, with a building tannin structure that finishes with tomato leaf, and bitter herbs. The most rustic and burly of the wines in the lineup of the 2015 Val di Suga vintage, it will benefit from allowing some time in cellar to see how this matures and its tarriness develops. The 2022 Zinfandel Pesenti Vineyard is a very pretty wine, and also surprisingly delicate for Paso. Medium in body, with terrific nuance, the Pesenti is super-expressive in this vintage. Crushed flowers, blood orange and cedar overtones linger on the aromatic, finessed finish.
