The story of this wine - The Sestina is an ancient form of poetry from Medieval France. Just as a modern poet can fill this form with new expressions, Avennia uses the traditional Bordeaux blend to express Washington. Sestina is their vision for an old vine, complex blend where all of the components complement each other. This wine is designed for the cellar, so the emphasis is on structure, balance, and complexity.

Leading off the Cabernet Sauvignon releases, the 2021 Cabernet Sauvignon Signature is a larger production release and is 79% Cabernet Sauvignon and nearly equal portions of Petit Verdot, Malbec, and Merlot. Smoky black fruits, graphite, crushed stone, and tobacco notes give way toa medium to full-bodied, concentrated, powerful 2021 offering ample mid-palate depth, a layered, textured, balanced mouthfeel, building tannins, and a gorgeous finish. It's a brilliant bottle of wine that will benefit from short-term cellaring and have over two decades of longevity.

The 2021 Domaine Joseph Voillot Volnay Les Champans Premier Cru is from the domain’s largest premier cru holding, 4.2 acres whose vines date from 1934, 1971, and 1985. Champans is down-slope in the premier cru band, and its wine typically has more fruit and power than other Voillot Volnays.

‘The 2021 Volnay Les Champans Ter Cru has much more brightness and delineation than the Fremiets this year, with red cherries, wild strawberries and ust a touch of iodine and sous-bois. This is nicely focused. The palate is medium-bodied with sappy red fruit, fine structure, pliant tannins and a harmonious finish. Not the most complex Champans encountered from this address, yet it has class.

The 2021 les Champans is also a simply stunning example of this fine premier cru vineyard. The beautifully elegant nose wafts from the glass in a blend of red and black plums, cherries, spit-roasted quail, a complex base of soil, woodsmoke, coffee bean and a deft touch of vanillin oak. On the palate the wine is pure, full-bodied and shows off superb depth at the core, great soil signature, ripe, fine-grained tannins and a long, nascently complex and very promising finish. This is a touch more reserved on the palate than the Fremiets and will take a bit longer to blossom, but it is going to be stellar. 2034-2085.

The nose opens with aromas of blackberry, blueberry, black current and boysenberry. The fruit elements are complimented with notes of forest floor, cigar box, dark chocolate and espresso. The wine is rich and balanced and French oak barrels add the ideal amount of complexity with notes of baking spice and warm vanilla. This is a full-bodied wine with integrated tannins that give it a long, lingering finish. Stunning.

Primary Vineyard: Sycamore Vineyard—Rutherford (100%): Small 24-acre vineyard located about 1.2 miles south of Bosche, right up against the Mayacamas Range, this vineyard has a rich clay loam. Sycamore Vineyard produces small berries reminiscent of mountain fruit berries, with intense extract of color and flavor. The color is very dark early in the fermentation, with flavors of black currant and black berry with a forest floor complexity.

As Hightower Cellars' signature wine, Cabernet Sauvignon is a classic Red Mountain wine – bold and full of the flavors that make this region so special. As much as possible, Tim and Kelly Hightower take a non-interventionist approach to winemaking. They place great emphasis on vineyard selection, picking, pressing, and blending so that Hightower wines are naturally beautiful and free from pretense. J. Lohr Signature Cabernet Sauvignon was first produced to honor the 80th birthday of founder Jerry Lohr. This limited release was specially selected and blended from the exceptional 2016 vintage in Paso Robles. It is both a tribute to Jerry's pioneering efforts in the region and our red wine portfolio's ultimate expression of Cabernet Sauvignon. VINEYARDS & CELLAR Beck Vineyard, in the Creston District of Paso Robles, is a unique, high elevation site that sits at 1,700 feet above the early morning fog line. Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Petit Verdot and Malbec add structure, color, and a component of bright fruit. The hand-harvested grapes were held separate at harvest and berry-sorted into six-ton open top tanks for fermentation. Justin Isosceles Proprietary Red Paso Robles is made from 83% Cabernet Sauvignon, 9% Merlot, 8% Cabernet Franc.

In 1987, we made our first vintage of a wine styled after the famous First Growth producers of Bordeaux, created with the same uncompromising care as the Grands Vins of those venerable chateaux. For more than 30 vintages, ISOSCELES has been our flagship wine and quality benchmark for this style of wine here on the Central Coast of California. A blend based on Cabernet Sauvignon supported by Cabernet Franc and Merlot, the 2018 ISOSCELES shows why Paso Robles is such a great place to grow these varieties.

Full-bodied, with ripe black fruit, complex baking spice and amazingly ready to drink right out of the gate, you can try a bottle or two now, but make sure to save a few to enjoy this wine as it continues to evolve after some time in the cellar.

Jersey Boys is a six-acre vineyard that was replanted in 2008 with four different clones of Cabernet Sauvignon, handpicked by winemaker Thomas Rivers Brown.

Wow…just Wow!! This wine has it all. Not as “big” as past vintages this wine is gangbusters right out of the gate. Ripe blackberry, juicy and rich with a wonderful chocolate core. La Ronciere Licanten Cabernet Sauvignon is made from 85% Cabernet Sauvignon, 8% Syrah, 7% Cabernet Franc.

 Intense aromas of black fruits, notes of dark chocolate, and roasted coffee. The palate is round with polished, juicy tannins and a finish that leaves a lasting impression.

Hand-harvested and field-sorted. An additional sorting occurs at the winery before the grapes are fermented in temperature-controlled micro-fermentation tanks. Aged in French oak for 10-12 months. : Diverse soils derived from metamorphic rock. Includes Licorellas (same as Priorat) and Lutitas rock complemented with a series of alluvial and granitic soils. Quartz and mica are both abundant in the soil profile.

Married with 8% Syrah and 7% Cabernet Franc, this very well-priced Cabernet Sauvignon uses grapes from three different soil types - granite, schist and sandstone. Nickel & Nickel Bear Track Cabernet Sauvignon is made from Napa Valley Cabernet Sauvignon. 

Bear Track Vineyard is planted in three terraced blocks on the eastern hillsides of Napa Valley, just outside of the Howell Mountain AVA. The cool climate and iron-rich, volcanic ash soils result in small, tight clusters of concentrated fruit. Ample hang time before harvest yields a Cabernet Sauvignon with intense, dark fruit flavors and integrated tannins.

My First comment tasting this wine is "wow!" It's delicious; our flagship wine at Paradigm and it delivers. Dense, deep, ripe aromas of black berry and black cherry-like fruit layered with caramel and toastiness from a nice mix of French Oak barrels. Flavors coat the palate with matching notes in a classic Cabernet Sauvignon presentation. One of our best Cabs to date!

Paul Hobbs Beckstoffer Dr. Crane Vineyard Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.

Grown on the west side of St. Helena, this distinctive cabernet sauvignon clearly displays its origins with a rich garnet hue and sophisticated aromas of cacao bean, crème de cassis, and sweet tobacco on the nose. Layered, with a superb structure, the wine offers impressions of blueberry coulis, black raspberry, and savory herbs like Herbs de Provence. The weighty mid-palate unveils anise spice and a graphite mineral note that combines with a fresh acidity that extends the long finish.

Needing plenty of air to show at its best, the 2019 Cabernet Sauvignon Beckstoffer Dr. Crane Vineyard is a sensational, gorgeous Napa Valley Cabernet that delivers the goods like only this region can. Pure Cabernet magic on the nose, with deep blackcurrants, smoked tobacco, lead pencil, and a kiss of spring flowers as well as a beautiful Pessac-Leognan-like scorched earth character, it hits the palate with full-bodied richness, silky tannins, no hard edges, and a great, great finish. It's one of those wines that builds incrementally on the palate and it's only after the second or third sip that you realize how special this wine is. It also offers that rare mix of power and elegance that's the hallmark of all great wines. It needs a couple of hours in the decanter if drinking any time soon. Hats off to Paul Hobbs for an incredible Napa Valley Cabernet Sauvignon.
