Deep garnet-purple in color, the ‘Cœur de Vallée’ is characterized by a striking bouquet of lavender and violets over a core of sweet red berries, crème de cassis, Chambord liqueur, blackcurrants and licorice, and com­pelling notes of mocha, espresso, chocolate and forest floor. This is the last vintage when this wine will come exclusively from Beckstoffer’s To Kalon vineyard. In the future it will come (more and more) from Morlet’s own new vineyard in Oakville—just across from To Kalon. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. Full-bodied and laden with densely packed, muscular fruit, it has a rock-solid frame of ripe, grainy tannins and seamless freshness, finishing very long with those To Kalon spices lingering with fantastic persistence. 250 cases produced, to be released in the fall of 2019.

Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. Ptit Paysan Cabernet Sauvignon  is made from 91% Cabernet Sauvignon, 6% Petite Verdot, 3% Cabernet Pfeffer.

Oak: 11 months on lees in neutral barrels

The Cabernet Sauvignon is sourced from a vineyard at the foot of the Santa Cruz Mountains west of Morgan Hill, which grows in a mix of granitic and volcanic soils, and a 25-year-old vineyard east of Gilroy, which grows in deep, extremely sandy soils against the foothills of the Diablo Range. The Petite Verdot is sourced from the Paicines AVA and grows in rocky alluvial deposits above the Tres Piños Arroyo. All three vineyards experience the warm days and cold nights typical of the Central Coast, allowing these late ripening Bordeaux varieties to be picked at high acidity and moderate sugars.

Le P'tit Paysan offers intense blackberry, dark cherry aromas, chocolate, herbaceous and toasty notes on the palate. Medium-bodied, well-balanced with moderate and integrated tannins that give structure and liveliness to the wine.

Pairs well with steak, duck, game, hearty stews, ribs, and dark, rich sauces.

St. Supery Dollarhide Estate Cabernet Sauvignon is made from 98% Cabernet Sauvignon, 2% Petit Verdot.

This Cabernet Sauvignon presents with deep, dark reds and purples. Aromas are opulent with ripe blackberry, black plum, cassis, chocolate, and toasted oak. A rich, dense profile follows with flavors of cassis and ripe black fruits, espresso, mocha, and molasses with subtle oak in influence. It is a deep, structured wine with excellent fine-grain tannin.

Mas la Plana is graceful and balanced despite its firm and dominant tannin profile. Bright crunchy acidity ensures a wine that will develop in the cellar for years to come. Trefethen Family Vineyards Cabernet Sauvignon is made from 88% Cabernet Sauvignon, 6% Malbec, 6% Petit Verdot . 

This wine pairs well with fatty dishes, which will highlight its fine-grained tannins and herbal notes. Winery Chef Chris Kennedy recommends fire roasted dishes and grilled or braised red meats.

Winemaking:  This wine is a classic Bordeaux blend of 78% Cabernet Sauvignon, 10% Malbec, 8% Merlot, 2% Cabernet Franc, 2% Petit Verdot.

.  The 2010 growing season was moderate, thus promoting slow ripening and full flavor development.  We hand-harvested and fermented each variety separately, then moved the wines to barrel, where they aged twelve months.  Once we determined our blend, we returned the wine to barrel for an additional twelve months, to 'marry' the varietals.  We used tight-grained French oak barrels (45% new) from coopers Taransaud, Vicard and Bossuet.

Winemaker Notes:

Complex, rich aromas foretell rich flavors of black currants, allspice and a hint of clove.  The wine is full bodied, with velvety texture, smooth tannins and an extensive finish.  Beautifully balanced, this Cabernet will age for ten more years.

Alcohol: 14.25 percent by volume

Just about pure perfection and the finest wine I've tasted from this address, the 2018 Cabernet Sauvignon is mostly Cabernet Sauvignon yet includes smaller amounts of Cabernet Franc and Petit Verdot, all from a site just north of Dominus. This deep, inky hued beauty offers up a beautiful, full-bodied, richly textured, and incredibly concentrated style that carries ample black and blue fruit as well as notes of crushed stone, scorched earth, graphite, and lead pencil. It has the focused, structured style of the 2018 vintage and is going to benefit from 4-6 years (if not a decade) of bottle age and will be a 30+ year wine.

We are delighted to offer our first Beckstoffer Georges III bottling in many years. The spectacular vineyard site with its back to the Silverado Trail is the historic site of the grand old BV masterpieces produced for most of the last century. It is as pure an expression of Napa Valley terroir as is available anywhere, from anyone. Ripe and round black fruits, spice, blueberry, and cedar, and cigar box aromas are echoed on the palate and balanced by a preternatural lift from natural acidity and a swell of earth notes. A stunning achievement.

Thick in sage brush, dried herb and earth, this wine is powerfully built and unabashedly ripe. Dark black fruit, mocha and graphite notes arise along the thick, intense palate, leading to finishing touches of slate and iron. Cellaring will help to tame the tannins; enjoy from 2028–2035.

This Mediterranean red blend from Siegel shows a beautiful red color with violet notes, a great aromatic expression with some notes of raspberries and blackberries with slight toasted notes. On the palate it is a round wine with good acidity and long finish.

Siegel San Elias Sauvignon Blanc is made from 100 percent Sauvignon Blanc

Pale in color with a goosberry bouquet, apple and citrus fruits aromas, and fresh zesty flavor.

Excellent aperitif or with salads, fish and poultry.

Siegel Special Reserve Carmenere is made from 100 percent Carmenere.

Viña Siegel is a family operated winery with a well-established tradition and long history. For generations we have been dedicated to the art of crafting wines with strong identities. Our Special Reserve wines represent the union of tradition and innovation in two generations. The grapes are sourced through careful selection of our best vineyards. Their ripe and round tannins clearly express the terroir of Colchagua. Siegel Special Reserve Carmenere has been aged for 12 months in French oak barrels. It has an intense violet-red color, with aromas of black fruits, spices, dark chocolate and dried figs. The palate is balanced and juicy with velvety tannins and a long finish.

Pre-fermentative cold maceration for 5 days, with alcoholic fermentation occurring at 27-29°C for a deeper colour and better structure. Smooth pump overs happen once a day at the winemaker’s discretion. Post-fermentative maceration for 2 weeks. Then the wine is separated from its lees and malolactic fermentation ensues. Once the wine has fermented it is smoothly clarified and cold stabilisation occurs when necessary.

It pairs well with spicy foods, pasta with mushrooms and roasts

Siegel Special Reserve Chardonnay is made from 100 percent Chardonnay.

This Chardonnay has a pale yellow color. On the nose is is complex with citrus and tropical fruit aromas balanced with notes from the oak aging. On the palate it has good acidity with a long finish.

VINIFICATION: Alcoholic fermentation occurs at 16-17 degrees C. When the alcoholic finishes part of the wine is kept on a pump-over program.

FINNING AND FILTRATION: Once the wine has been blended it is clarified and then undergoes cold stablisation and is later filtered through clay.

AGING: Aged in French oak barrels for 6 months.

Pairs well with fish like Tilapia, salmon and white meats.

Avennia Red Willow Cabernet Sauvignon is made from 100% Cabernet Sauvignon.

The Red Willow Cabernet is a true blockbuster.
Coming from one specific block of 30 year old vines at this iconic vineyard, then strictly barrel selected, this is the essence of powerful, old vine Washington Cabernet. After all of our efforts promoting the idea of the Bordeaux blend, it would take a pretty compelling argument to suspend that idea and make a 100% varietal Cabernet. In 2016 Red Willow provided us with just that. Each time we tasted it in the barrel, the belief grew that this was something special. Something we can't make every year. In the end we were won over, and decided to make a limited amount of this wine. But don't be fooled, as this too is a blend and a selection. Each year as we are tasting the grapes as harvest approaches, we notice that the vines near the bottom of this long, steep west-facing slope, are a little different. The vines at the bottom are in a little richer soil, and get a little more water, so we pick them separately, sometimes even a week or ten days apart, and keep them separate in barrel.

This wine is all from the top of the vineyard, with its lower yield and poorer soils giving more concentration and interest. Then further, nearly every combination of new and used French oak barrels were trialed to find the best blend. It's not enough just to use the four best barrels, but to trial each combination to see how they complement each other. For a wine with this much mass, 100% new French oak was used for the first time at Avennia. It is a wine that needs a little cellaring to start, but should last a very long time.

Made from 100% Red Willow Cabernet Sauvignon, the 2016 Cabernet Sauvignon Red Willow is another gem from this great winemaker. Deep purple-colored, with a huge perfume of blackberries, crème de cassis, cedarwood, pencil lead, and graphite, it hits the palate with medium to full-bodied richness and depth, nicely integrated acidity, and building, ripe tannins. Give bottles 3-4 years and it too will cruise for 15-20 years or more.

The 2020 Sestina showed beautifully, with lots of ripe black fruits, tobacco, and spring flower notes in a medium to full-bodied, fresh, focused, elegant style. It has fine tannins and a great finish and should drink nicely right out of the gate. The tannins here are terrific.
