Lydian Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.

Maipe Cabernet Sauvignon is made from 100% Cabernet Sauvignon, 35 years old vines.

Maipe was the Lord of the Winds for the ancient Andean Indians. He is still called upon to clear the skies after heavy rain, or to temper the summer heat.

This Cabernet Sauvignon has an intense ruby red color with aromas and flavors of ripe blackcurrant, red pepper, mint, chocolate and vanilla hints.

35 years old vines. 14 day fermentation with selected yeasts at 26-28°C; 5 days post fermentative maceration; 1 day delestage; malolactic fermentation.

The fruit and tannins are perfectly balanced to give a wine of excellent structure making it ideal for grilled meats, game, pasta or pizza.

From the Beckstoffer To Kalon Vineyard, the 2013 Coeur de la Vallée shows creamy tannins, beautiful blackberry and cassis fruit, and hints of blueberries, violets, forest floor and licorice. This is a blend of 75% Cabernet Sauvignon and 25% Cabernet Franc, and the black fruits are triumphant in this gorgeous wine. It should drink nicely for 25-30 years.

Dark and deep with a hue of deep bright ruby red. Intense and complex bouquet of red cherry and blackberry intermixed with notes of minerals (graphite, wet river rocks), licorice, fresh blond tobacco and a hint of fresh blackcurrant. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and with an outstanding finesse. The tannins from both bench and foothill locations create a harmonious ensemble, leading to a long, seamless and elegant finish. More masculine, backward, and austere, with a Chateau Latour-like character, the 2015 Morlet Estate gives up darker fruits, crushed rock, and ample lead pencil-like notions to go with a full-bodied, concentrated, structured feel on the palate. Morlet Family Vineyards Mon Chevalier Cabernet Sauvignon is made from 94% Cabernet Sauvignon 6% Cabernet Franc .

Located on the hillsides of Knights Valley, near Calistoga, this vineyard benefits from its proximity to Mount St. Helena, whose warm and windy climate is ideal for the long ripening of the Bordeaux red varietals. Handcrafted by using classical winemaking techniques, this special wine is dedicated to our son, Paul Morlet.

Dark red with a hue of purple. Intense and complex bouquet of red, black and blue berries intermixed with notes of blueberries, minerals (graphite, wet river rocks) licorice, fresh blond tobacco and a hint of lavender. Full bodied, the palate is reminiscent of the nose, with a richly tannic yet round frame and a great intensity. The hillside tannins and the classical aromatic complexity create a harmonious ensemble, leading to a very long and elegant finish. Built to age for decades, this collectible wine opens up after a few years of cellaring and is particularly representative of this special vineyard from the hillside of Knights Valley. The 2017 'Mon Chevalier' is rich, deep and unctuous, with all the character that makes wines from this site so exciting. Graphite, inky blue/purplish fruit, spice and lavender infuse the 2017 with tremendous complexity. In the glass, the 2017 is savory, rich and expansive, not to mention hugely appealing.

  The 2021 My Favorite Neighbor Cabernet Sauvignon fills the glass with a seamless culmination of black cherry, cassis and warm spice. On the palate, you are rewarded with a full body displaying blackberry and plum with underlying notes of tobacco. An additional layer of red fruit and a pop of acid, combined with well- integrated tannins and a beautifully crafted structure, leave nothing to be desired. Paul Hobbs Coombsville Cabernet Sauvignon is made from 100% Cabernet Sauvignon

Ptit Paysan Cabernet Sauvignon  is made from 91% Cabernet Sauvignon, 6% Petite Verdot, 3% Cabernet Pfeffer.

Oak: 11 months on lees in neutral barrels

The Cabernet Sauvignon is sourced from a vineyard at the foot of the Santa Cruz Mountains west of Morgan Hill, which grows in a mix of granitic and volcanic soils, and a 25-year-old vineyard east of Gilroy, which grows in deep, extremely sandy soils against the foothills of the Diablo Range. The Petite Verdot is sourced from the Paicines AVA and grows in rocky alluvial deposits above the Tres Piños Arroyo. All three vineyards experience the warm days and cold nights typical of the Central Coast, allowing these late ripening Bordeaux varieties to be picked at high acidity and moderate sugars.

Le P'tit Paysan offers intense blackberry, dark cherry aromas, chocolate, herbaceous and toasty notes on the palate. Medium-bodied, well-balanced with moderate and integrated tannins that give structure and liveliness to the wine.

Pairs well with steak, duck, game, hearty stews, ribs, and dark, rich sauces.

Riebeek Cabernet Sauvignon is made from 100% Cabernet Sauvignon.

An exciting new world style wine with upfront blackcurrant flavors. The black fruit is well-balanced with subtle French oak for a complex nose and an elegant and lingering follow-through. An exceptional example of a lighter style Cabernet Sauvignon that can be enjoyed young. Excellent with red meat dishes or veal.

Cold soaked overnight. Inoculated with selected yeast. Fermentation temperature was between 24 -26 degrees Celsius. Regular pump-overs were given to enhance colour and flavour extraction. Different batches of wine matured with French oak staves and 2nd and 3rd fill barrels were all blended together to perfection.

Served at room temperature, this Cabernet Sauvignon pairs perfectly with red meat dishes, especially classic recipes like roasted leg of lam, grilled lamb chops and beef kebabs.

Silverado Vineyards Geo Cabernet Sauvignon is made from 100% Napa Cabernet Sauvignon.

In 1988, Ron and Diane Miller, purchased the Mt George Vineyard, the site of the first vinifera plantings in the Coombsville AVA. Situated in a quiet corner of the Napa Valley a few miles east of the city of Napa, Mt George is a vineyard of undeniable strength. As the 20th anniversary of Silverado’s first Mt George harvest approached in 2012, the decision was made to make a wine for the occasion. It is called GEO – Greek for “Earth” and short for “George” – and it represents the highest expression of single-vineyard Cabernet from this extraordinary place.

Aromas of black cherry liquor, crushed hazelnut, tilled earth, and dried rose petal. Decadent and rich on the palate with flavors of sweet dark plum and cocoa powder. Well-integrated tannins lead to a seamless finish.

Black, inky earthiness defines the nose and palate, along with a round, silky mouthfeel. Cocoa and dried violets appear against a slightly dusty backdrop, while notes of leather, black olive, and slate are soul-stirring. Stonestreet Estate Vineyards Rockfall Cabernet Sauvignon is made from Cabernet Sauvignon.

Sourced from one of our highest elevation vineyards, the 2017 Rockfall Vineyard Cabernet Sauvignon features a true wildness that expresses the rugged growing site 2,000ft above the fog line. Elegant aromas of blueberries, cassis, graphite and black tea with complex undercurrents of baking spices. This wine balances power with elegance through to its savory palate with a generous structure and ample tannins. The structure of this wine allows for many years of cellar aging to continue to bring out nuanced flavors and complexity.

The Rockfall Vineyard is between 2,000 and 2,200-feet in elevation, and the wine that originates there is powerful and concentrated in style, with robust red-fruit and mineral tones. The 2019 Cabernet Sauvignon Kingly Project is fabulous. A wine of vertical power and thrust, the 2019 soars out of the glass, showing magnificent intensity from start to finish. Black cherry, scorched earth, licorice, plum and chocolate give this substantial Cabernet tons of complexity. I would cellar the 2019 for at least a few years to allow the tannins to soften. -

The 2019 Cabernet Sauvignon Winfield Vineyard is a blend taken from three blocks in the vineyard. A potent, layered Cabernet, the Winfield is super-expressive today. Dark red cherry, licorice, incense and savory herbs all flesh out in a potent, resonant Calistoga Cabernet that hits all the right notes. This is impressive, to say the least.

Named after the founder of To Kalon, H.W.C is produced from one single clonal selection of Cabernet Sauvignon within To Kalon. These vines were originally planted by Robert Mondavi, who was lured to To Kalon by the depth and richness of the wines he made from the vineyard in the 1960s. This incredibly low-yielding selection of Cabernet Sauvignon produces wines with high energy, a black-purple color, and exceptional aromatic and palate intensity—a high-resolution look at this noble variety. While not overly ripe or extracted, the wine has remarkable freshness, texture, richness, and length. Four extra months of barrel aging give it a high level of polish and a silky finish.

Trefethen Family Vineyards Cabernet Sauvignon is made from 85 percent Cabernet Sauvignon; 10% Petit Verdot; 3% Merlot; 2% Malbec; 1% Cabernet Franc. 

Review:

Sophisticated oak spices top abundant, ripe and chocolaty fruit flavors in this full-bodied, generous and velvety textured wine. While needing time for full enjoyment, this gorgeous bottle could be decanted and savored sooner with a steak or roast.

Winemaking:  This wine is a classic Bordeaux blend of 78% Cabernet Sauvignon, 10% Malbec, 8% Merlot, 2% Cabernet Franc, 2% Petit Verdot.

.  The 2010 growing season was moderate, thus promoting slow ripening and full flavor development.  We hand-harvested and fermented each variety separately, then moved the wines to barrel, where they aged twelve months.  Once we determined our blend, we returned the wine to barrel for an additional twelve months, to 'marry' the varietals.  We used tight-grained French oak barrels (45% new) from coopers Taransaud, Vicard and Bossuet.

Winemaker Notes:

Complex, rich aromas foretell rich flavors of black currants, allspice and a hint of clove.  The wine is full bodied, with velvety texture, smooth tannins and an extensive finish.  Beautifully balanced, this Cabernet will age for ten more years.

Alcohol: 14.25 percent by volume

"Savory, dried red capsicum with cedar, cocoa powder and dried mushrooms on top of black cherries. Juicy and layered with some currants and savory earthy spices on the palate. Not quite deep, but a very elegant and savory expression of cabernet with a very long, subtle finish. A little sweet-sour, but quite refined and approachable, too. Drink now."
