Gessinger Zeltinger Sonnenuhr Riesling Spatlese St. Josef is made from 100 percent Riesling. 

The Zeltinger Sonnenuhr Riesling Spätlese St. Josef - formerly know as Josefsberg- was produced from fruit harvested from 120-year-old vines in a prime Rothlay part of the vineyard known locally as Josefsberg, next to the cross of St. Josef - the patron of vineyard growers. Here grow old, ungrafted Riesling vines whose particular small and loose grapes develop a lot of aroma.

It was made from fruit picked at the end of the harvest and was fermented down to sweet levels of residual sugar. It offers a backward nose made of white peach, melon, smoke, herbs, and minerals. On the pleasant racy palate and the wine leaves a beautiful feel of ripe fruits packed into zesty minerals in the finish. The featherlight side of this Spätlese paired with its flavor intensity are simply a thing of beauty. However, during the years this wine will reveal all its facets.

Perfect match to Asian cuisine as well as spicy food.

Gimenez Mendez Alta Reserva Sauvignon Blanc is made from 100 percent Sauvignon Blanc. 

Gimenez Mendez Sauvignon Blanc shows a very pale hue, almost crystal clear in color. Intense and herbal bouquet in harmony with fruity notes of guava and green apple, mango and maracuja. The wine is full and ample on the palate with a very firm structure. Dry, crisp and lively in the mouth.

Sauvignon blanc grapes are hand harvested very early during some mornings of February. Banches are destemmed and delicately crushed. With a quick press, fresh and very aromatic juice are obtained. Juice is fermented in stainless steel tanks during 15 days at controlled low temperatures, between 14 to 16 °C .Once fermentation is finished lees are kept and stirred for 1 month to get a creamy texture. Then a carefully clarification is necessary. The wine is filtered and stabilized without cold, and finally bottled to keep the freshness. No oak.

Ideal to serve with very spicy seafood, sushi or salads, as well as white meats with sweet-sour sauces, paté. Serve chilled.

Review:

An un-oaked white that shines with green herbs, grapefruit zest, pea tendrils and superb acidity. It shows exotic floral notes with a steely middle. A pop of nectarine on the finish adds to its crystal clean clarity.

They stayed in his cellar until being moved to the Timeless Wines warehouse.

Limpid ruby-red. Fresh red berries, blood orange, floral and baking spice qualities on the incisive nose. Juicy, focused and lithe on the palate, offering subtly sweet raspberry and cherry flavors and building spicecake and cola nuances. Closes long and nervy, with discreet tannins framing repeating floral and spice notes.

Dark crimson in color, with deep garnet hues. A concentrated array of aromas of mulberry, blackberry and dark plum indicate the richness to come, while savory and complex notes of charcuterie, cedar, sage and five spice tease the senses. Plush and velvety on the palate, the wine has intense fruit concentration with plum, red currant, blackberry and anise flavors, yet an enchantingly elegant and refined structure. Layers of silky tannins reveal the impressive depth of the wine before giving way to an incredibly long finish.

A rather refined Hill of Grace with roasted meat, smoked meat, and juicy plums. Some mushroom and forest-flower character, too. It’s medium- to full-bodied, juicy and savory. Light white pepper at the end. Underlying finesse and elegance to this. The flavor does not go away. From biodynamically grown grapes. Drink or hold.

 Heritage School Julies Creekside Cabernet Sauvingon is made from 100 percent Cabernet Sauvignon.

The Cabernet Sauvignon Julie’s Creekside Vineyard is an impressive, opaque purple colored wine that is super-concentrated and extracted with relatively sweet tannins, a touch of chocolate and espresso, a full-bodied mouthfeel and pure, dark, primordial fruits. This is a big, masculine, concentrated wine set for long-term aging. Saying that, it has a certain accessibility, but won’t hit its prime for at least another 8-10 years and keep 25-30.

Hickinbotham Trueman Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon. 

Trueman represents Cabernet in Clarendon at its best. Its purity, its elegant style, its supple, polished nature ... it’s a wine of its own.Distinct in character, this is not like Cabernet from the Vales below or the hills to the east. From its pretty, delicate florals and musk, through to its silky blackcurrant and kalamata juice and down to its dark carbon soul - Trueman is a modern Cabernet that encapsulates all the toil and antiquity of Clarendon. Echoing the unearthed prose of wine writer Ebenezer Ward from 1886 on theCabernet sown from this very land – Trueman is “an excelled wine, of very marked flavor and bouquet”.

Deep garnet/purple, the 2012 Cabernet Sauvignon Hickinbotham Vineyard has a classic nose showing pronounced fresh blackcurrant and blackberry highlighted by cloves, menthol, pencil shavings and earth notes. Medium to full-bodied, taut and muscular, the palate has grainy tannins, nice freshness and a long finish.

Hoopes Cabernet Sauvignon Napa Valley is made from 100 percent Cabernet Sauvignon.

This wine has a very pretty fruit-forward nose filled with plummy sweet tarts, cherry compote, cocoa nibs, hard candy, cedar box, and allspice. The entry is fresh and clean with a core of delicious generous fruit. It has a lovely elegant texture, weighty middle and resolves into a mocha filled finish.

Hoopes Cabernet Sauvignon Oakville is made from 100 percent Cabernet Sauvignon.

“Our flagship wine is, and always has been, the soul of our farm. Crafted from our ten-acre vineyard in the heart of Oakville, planted in 1983, it was previously a fruit source for a number of famous estates until we started winemaking ourselves. The soil is dense in geologic composition, featuring four different types of soil. One, volcanic, is unheard of in the Oakville sub-appellation, with the exception of To Kalon, and is rarely, if ever present, in valley floor vineyards. We harvest this vineyard in fourteen small batches, despite the small size, to ensure the perfect balance of acid, flavor, and tannins. "

This wine's deep garnet hue invites you to dive into the nose as it opens with soft fruity-floral aromas of lilac and rose petals then moving into red fruits, pencil shavings, honey and plum. The aromas are deceptively delicate and refined with an ethereal quality. The mouth is more concentrated leaning towards ripe, rich black fruits. Juicy blueberry and sweet licorice flavors carry into the mid-palate with an open, spacious and inviting character. Lush, elegant, tannins support a mouthwatering finish with a savory aspect and notes of black tea bringing the wine to a balanced and layered close.

  The 2019 Cabernet Sauvignon Oakville brings more elegance and finesse. Coming all from Oakville and aged 28 months in 50% new barrels, it has perfumed red and black fruits, lots of spicy oak, medium body, and just a seamless, pretty, elegant profile that's going to evolve nicely for 10-15 years.

Hugl Gemischter Satz is made from 50% Grüner Veltliner, 40% Gelber Muskateller and 10% Riesling.

Gemischter Satz" has a long history in Austria. It is a field blend where different grape varieties are picked at the same time and vinified together:

In Vienna, the tradition of planting different and complementary grape varieties together in a vineyard – then harvesting and fermenting them together as well – has survived to the present day as Gemischter Satz. Thanks to the dynamic efforts of ambitious winegrowers, this traditional rarity has grown in stature and recognition to become the calling card of viticulture in Austria’s capital city.

Gemischter Satz is very popular in Vienna’s Heurigen (the Viennese term for wine taverns). Historically, Heurigen were simple places, where vineyard owners would open their doors during wine season to serve glasses of this years wine and juices to guests. At most, a plate of cold meats and cheese could be served along with the delicious wine.

For the traditional wines of Wiener Gemischter Satz - the planting of different grape varieties together in one vineyard - a unique style profile has been developed; a style that reflects the wine's origin-typical aromas and flavours. The regulation for the Wiener Gemischter Satz DAC requires that at least three white quality wine varieties must be planted together in one vineyard that is listed in the Viennese vineyard register as Wiener Gemischter Satz. The highest portion of one grape variety must be no more than 50%; the third highest portion must be at least 10%. Wines without vineyard indication must be dry and without any prominent wood flavour. The Wiener Gemischter Satz DAC can be marketed with an indication of vineyard site also. Single vineyard wines do not necessarily have to correspond with the “dry” taste indication, and they cannot be released for sale prior to March 1st of the year following the harvest. Minimum alcohol % of 12.5%.

The new regulations sharpen the origin profile of Wiener Gemischter Satz and, at the same time, reflect Vienna´s diversity in the glass.”

Hugl Rosselberg Horse Hill Gruner Veltliner is made from 100% Grüner Veltliner

A powerful, very ripe Grüner Veltliner, intense and full-bodied with a long finish.

The ripe grapes are processed very gently with 12 hours on the skins and then vinified in Stainless Steel tanks. No Oak.

A firm mineral backbone, gives it the strength of character to work well with many cuisines.
