Beliere Bugey-Cerdon  is made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Spontaneous fermentation. An altogether preferable scenario to spontaneous combustion, and A LOT more fun to drink. This pink, semi-dry bubbly was made by spontaneous fermentation, otherwise known as methode ancestrale. Grapes are picked by hand (not just any grapes, these are the local Poulsard and Gamay grown on mountainous slopes in the shadow of the Alps), and fermented in chilled vats just reaching 5 or 6 degrees alcohol. The young and light wine is then bottled, along with its active yeast and considerable unfermented sugars. Under pressure of the cork, the wine continues to ferment, gaining a few degrees of alcohol but retaining a nice amount of sweetness. The bubbles, of course, are another result of fermentation under pressure. This one is so delicious and fun to drink, with a distinctly, well, grapy aroma and a fruitiness that calls out for celebration and jubilation. 
This is also wonderful served with chocolate cake! 
8% ABV.

Produced from the "Ancestral method" (also used to produce Clairette de Die): Low temperature fermentation starting in the tank, light filtration that leaves active yeast in the wine, bottling of the wine with fermentation continuing in the bottle ("spontaneous fermentation in the bottle"), retaining some sugar (40 gr/liter at the end). Made from 95% Gamay, 5% Poulsard (a local grape from Jura).

Dairyman Vineyard is made from 100 percent Pinot Noir. 

Dark plum in color with abundant aromas of dark chocolate, black cherry, and sun-ripened blackberry with a hint of cedar. Layered flavors of blackberry and raspberry pie filling, accompanied by notes of cinnamon, chocolate, and nutmeg play on the palate. Smooth and focused with refined tannins and a medium finish.

Review:

This inky-purple wine exudes aromas of spiced cranberry. Deep and luxurious on the palate, with black cherry, chocolate, and 'sarsaparilla converging to complement the round, silky mouthfeel. The savory core of beetroot, plum, and bal- samic lends a shadowed touch to the fine acid structure. Blueberry breaks through on the cinnamon-charmed finish.

Betz Family Besoleil is made from 55% Grenache, 23% Mourvèdre, 11% Syrah and the rest Cinsault,

Grenache speaks loudly in the Bésoleil with notes of pomegranate, red raspberry, and strawberry leaf. The Counoise and Cinsualt bring bing cherry fruit and blueberry notes to the table, complicated by pepper and garrique. Mourvedre donates a wild meatiness to the blend, and a purple hue. Syrah rounds things out, adding texture, and flesh to the palate.

"Moving more and more from Olsen Vineyard, which is 20 miles northwest of Red Mountain (where they love working with the grower, who is proactive and responsive), the medium ruby/purple-colored 2016 Besoleil is 55% Grenache, 23% Mourvèdre, 11% Syrah and the rest Cinsault, all aged in a mix of neutral barrels. It offers beautiful notes of red plums, blueberries, white and black pepper and herbs de Provence, medium to full-bodied richness, a silky, elegant style, and integrated acidity. Black Stallion Napa Valley Limited Release Red. 

The winery takes its name from a major equestrian area that once occupied the grounds. Its calling card is Cabernet Sauvignon, made in a classic Napa Valley style that offers richness and finesse. Bling de la Ferme Blanche Sparkling Millesime is made from 90% Sauvignon Blanc and 10% Clairette.

This is a Traditional Method Vintage Sparkling wine. Grapes are coming from the region of Cassis, but this sparkling wine can't be classified as Cassis AOC as the AOC is strictly for still White, Rosé and Red. 

It is made with the local grape variety : Sauvignon Blanc and Clairette.

Fine bubbles, crisp and delicate, citrus zest, lime, stone fruit.

Intense ruby ​​​​color of high layer with garnet edge, clean and shiny. Intense nose that, from the beginning, transmits complexity, penetrating, with aromas of black fruits, blueberries and currants, undergrowth, roasted memories, toffee, coffee powder, liquorice, cloves, vanilla and lebanese cedar. Mouth with freshness and balance, with tannins ripe and creamy, which highlight its elegance, with a step harmonious and intense. Long and pleasant aftertaste, with a great variety of balsamic and spicy memories.

Review:

The old-vine component of the El Otero parcel, running to around seven hectares, supplies the fruit for this ageworthy Tinto Fino. After a frost-induced break in 2017, it's back with interest in 2018. Aged in new French oak, but not dominated by the wood, it's a finely judged red from Julio Sáenz with notes of blackberry and tangerine, filigree tannins and a long, textured finish. 2023-33

Deep cherry red in color with a garnet rim. On the nose, it is intense and elegant, with a base of ripe fruits that blends with the subtle tertiary aromas of sweet spices and cocoa. On the palate, it is balanced, full-bodied but with sweet and pleasant tannins, with a long and very persistent aftertaste.

Boekenhoutskloof Syrah Swartland is made from 100 percent Syrah. 

Grapes for our Boekenhoutskloof Syrah are picked from selected parcels of the finest Syrah, grown at our Swartland farms, namely Porseleinberg and Goldmine, close to the small town of Riebeek-Kasteel. These vineyards were planted on the rocky bedrock of decomposed Mica-Schist, a unique terroir, finding its expression in our concentrated and structured wines made from this Rhône grape.

The nose is perfumed, forthcoming and fresh, offering an array of rich dark fruits with a spicy, floral, even feral character, derived from complex aromas of dark berries, plums, violets, black olives, star anise and potting soil. The black fruits and earthy character of the nose follow through onto a dark, brooding palate with flavours of wild berries, brambles, liquorice, tobacco, cloves and black cardamom. The mid-palate is concentrated, deep, dense and slightly dusty, with dry, very fine cocoa-powdery tannins lending structure. The wine is very precise, with a medium to full body, a tight, grainy texture and vibrant acidity to balance. Blackberries, blueberries and notes of garrigue and dark chocolate linger on a savoury finish.

Using fruit from two exceptional Swartland sources – Goldmine and mostly Porseleinberg – this foudre-aged Syrah is fresh, subtle and intensely aromatic, as schist Syrahs often tend to be. Complex, floral and refined with remarkable freshness and palate length. Drink: 2020-2028.

Monteagrelo Cabernet Franc has beautiful ruby red with purple highlights.

It displays aromas of ripe red berries with a nice wood smoke complexity, thanks to the aging in French oak barrels. The wine has a very good structure, but the tannins are still quite round and integrated.

Aged in French and American oak barrels for 15 months. No filtration and no fining.

The finish is very long and will allow the wine to be consumed with food, such as grilled meat or cheese.

"From the Uco Valley, the 2019 Cabernet Franc Monteagrelo was aged in French vats for 10 months. A light purple in hue, the precise, expressive nose presents notes of green pepper, blackcurrant and ash with hints of jalapeño. Smooth with a broad palate, the flow is corseted a little by the mild freshness, as is the bold finish. A delicate red of a kind you rarely see in a Cabernet Franc. - Joaquín Hidalgo"

Capanna Brunello di Montalcino Riserva 2015

TYPE: DOCG

Castello di Bossi Gran Selezione is made from 100% Sangiovese.

Gran Selezione is the newest quality designation to have been added to the DOCG classification system in Chianti Classico. Gran Selezione takes quality controls a step further than Riserva-- which previously occupied the top tier-- by banning the use of any purchased, or non-estate-grown fruit, in the inclusion of a wine labeled Gran Selezione. This coupled with longer aging requirements (30 months minimum) and minimum levels of alcohol set to 13% designates a band of wines from Chianti Classico producers representative of the appellation's highest quality potential with often limited availability.

Review:

There’s purity to the cherry, strawberry, rose, mineral and herb aromas and flavors in this solidly built red, which shows excellent balance and length. The muscular finish begs for more time for the beautiful fruit to assimilate. Best from 2025 through 2042.

I feel this wine expresses the greatness of California and its hidden pockets where Cabernet can excel. The cold Pacific Ocean running the entire length of the state presents maritime influences – and with each small distance eastward the climate warms. Stony soils, south facing slopes and moderately warm conditions are the keys to producing dark, rich and good tasting Cabernet.

A small release from Caymus Vineyards, this wine is a California-appellation Cabernet Sauvignon – supple, dark and rich, bearing the signature hallmarks of Caymus. It is sourced from sites throughout the state which feature climatic conditions, soils and topography that are ideally suited to Cabernet. This project stems from excitement over California's diverse vineyard land, often in lesser-known areas, with the potential to produce exceptional Cabernet. 

Pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse. 

Chateau Talbot Saint-Julien Grand Cru Classe is made from 69 % Cabernet Sauvignon, 26 % Merlot, 5 % Petit Verdot.

The wine presents a delicate and captivating nose of black fruits, fresh tobacco, peppermint and floral nuances. Ripe and juicy fruit flavors of black currants on the palate with well integrated velvety tannins and a beautiful refreshing acidity to the long finish.

For the 2018 vintage, a special packaging with a unique silkscreen printing bottle was created to mark the 100th anniversary of the Cordier Family's acquisition of Chateau Talbot

Trois Moulins Haut-Medoc Cru is made from 52% Merlot, 33% Cabernet Sauvignon and 15% Cabernet Franc.

Average age of vines: 19 years.

Aged 8 months in French oak barrels (1 year old barrels)

This wine is ripe and firm on the palate. Flavors of black plum skin and blackberry form a rich wine that is approachable at an early age.  This wine is weighted enough to balance the intense tannins, with enough acidic structure to lift the finish.

Cheurlin Thomas 'Celebrite' Blanc de Blancs Extra Brut

An elegant soft gold color with a refined ring of bubbles. The nose reveals fruity aromas of a complex wine. The mouth is fresh and balanced with a woody finish. A great character with a perfect balance.

Cuvee harvested on the south facing land. The limestone base of the seat is emphasized by a thin bed of Kimmeridgian marl leaving a grayish underground, earth colored by white marl, ground vineyards par excellence. The wine is matured in oak barrel and pipe, second fermentation in the bottle with a minimum of 18 months aging. Reflects the white varieties of the Barrois hillsides.

Dark an brooding in the glass, our 2019 Hommage Cabernet Sauvignon is bursting with ripe plums, black cherries and notes of cassis. On the palate the black fruits linger and mix with a hint of crushed cassia bark and toasted oak and are surrounded by strong, balanced tannins and notes of espresso and dark chocolate. This wine is bold and sensuous with a silky texture and lengthy finish.

Our Tenma Vineyard is located in the foothills of Mount St. Helena northeast of the town of Calistoga. These 40 acres of rugged land are part of an alluvial fan spilling out from the Palisades Mountains in the northeast corner of the Napa Valley. The rocky terrain here is well-drained with a very sparse topsoil which is a perfect combination for growing world-class Cabernet Sauvignon when combined with the climate of Napa Valley. The 2016 Cabernet Sauvignon Hommage is deep purple-black colored and reveals notes of crème de cassis, stewed plums and fruitcake with touches of licorice, Chinese five spice and hoisin with a waft of cedar chest. Full-bodied, opulent and boldly fruited with loads of berry preserves layers, it has a chewy backbone and earthy accents on the finish.

Clos Saint-Jean is a 41-hectare estate in Châteauneuf-du-Pape run by brothers Vincent and Pascal Maurel. Considered by many critics and wine-writers as the preeminent estate espousing the modern style of winemaking in Châteauneuf, this cellar is one of the oldest in the region, having been founded in 1900 by the greatgreat-grandfather of Vincent and Pascal, Edmund Tacussel. A short time after its founding and well before the AOP of Chateauneuf-du-Pape was created in 1923, Edmund began bottling estate wines in 1910.

The farming at Clos Saint-Jean is fully sustainable due to the warm and dry climate, which prevents the need for chemical inputs. Instead, Vincent and Pascal employ organic methods for pest control, mainly pheromones, to prevent pests from taking up residence in their vines, a process called amusingly enough in French, confusion sexuelle. The vines tended manually, and harvest is conducted in several passes entirely by hand.

Combe des Fous literally means, the hill of the fool. The hill, in this case, is located in the far southern reach of Le Crau which was left barren for many centuries because the layer of galets was so exceedingly deep that everyone assumed vines could never survive there. The fool in this situation is Edmund Tacussel, the great-great-grandfather of Vincent and Pascal Maruel who planted a Grenache vineyard on this site in 1905. That old-vine Grenache form the heart of this cuvée with a small amount of Syrah, Cinsault and Vaccarèse. La Combe des Fous is only made in the best vintages.

Pumps out heady raspberry, mulberry and blackberry compote notes that keep form and direction, thanks to a roasted apple wood spine and flanking ganache, garrigue and warm earth notes. Seriously grippy finish. Grenache, Syrah, Cinsault and Vaccarèse.

The 2020 Châteauneuf Du Pape La Combe Des Fous is a normal blend of 70% Grenache, 20% Syrah, and the rest Vaccarèse and Cinsault. Beautiful, full-bodied aromas and flavors of ripe black raspberries, violets, ground pepper, lavender, and herbes de Provence all emerge from this gorgeous barrel sample, and it shows the pure, fresh, yet still concentrated style of the vintage brilliantly.
