Oumsiyat Cabernet Sauvignon is made from 100 percent Cabernet Sauvignon.
Classic Cabernet Sauvignon with Dark Berries Dominance mixed with tobacco and chocolate aromas. Concentrated tannins, balanced with good acidity and persistence finish.

The fruit was carefully sorted to ensure only healthy, ripe grapes were vinified. Traditional fermentation took place in stainless steel tanks at controlled temperatures of 28°C, with remontage or pump overs took place periodically to oxygenate the wine and extract tannins. Pigeage or punching down of the cap also took place. A long post-fermentation maceration took place to extract color, flavor and impart structure to the wine. The wine was gently filtered prior to bottling.
A complex Carignan mixing black fruits and spices. Intense color and fine structure with rounded tannins and volume in the mouth.

Meaty and dark-fruited nose. Full-bodied with slightly chewy tannins. I like the bright acidity and definition of fruit on the palate here. Lifted and juicy. Delicious.

Pago de Carraovejas Cuesta Liebres is made from 100% Tinto Fino. The plot is located on a terraced hillside located at 900 m above sea level with slopes that range between inclines of 30% and 40%. Red cherry color with purple hues. Ripe fruit aromas, vanilla notes. Suave and unctuous in the mouth. A strong and noble character.
The harvest is carried out by hand using small crates and after passing through a refrigerated container it is transferred into tanks via gravity. The alcoholic and malolatic fermentation is carried out in small French “Haute Futaie” Oak casks with unique and original local yeasts and fermenting bacteria from the vineyard itself, to bring out the very best of the terroir, respecting the uniqueness of each and every vintage. Clarified with egg whites and bottled by gravity with natural cork stoppers.

A benchmark Ribera del Duero when it comes to quality. Expect the fine integration of high-grade wood, showing notes of peppermint, spices, truffles, dark chocolate, grilled herbs and dark cherry and blackberry fruit. More restrained in oak use compared with the old vintages for sure. Full-bodied and resolved, with seamless, powdery tannins and a juicy, tightly wound finish. Even, polished and effortless for such remarkable balance. It has a high level of concentration, with plush, integrated oak. Drink or hold.

The Pago de Carraovejas Ribera del Duero vintage marks a turning point in the history of the winery. From now on, the Crianza and Reserva are unified in this wine that focuses on the terroir and character rather than the time of aging. Its renewed label reflects the three key elements of this red: origin, soul and emotion.
Pago de Carraovejas Ribera Del Duero is made with grapes grown in the Botijas River valley, and planted between 1988 and 2011. Our work over the last 30 years has been geared to handcrafted viniculture, that puts as much care as possible into the microclimate conditions and the details. We have placed particular attention on the maintenance of the soil by plant cover that already grows spontaneously. It allows us to develop the ecosystem of the valley, which we respect scrupulously, using organic fertilizer and sulfur as the sole basis of our viticulture.
Depending on which plot they come from and the time they enter the winery, the grapes may be deposited in cold chambers to prevent oxidation and preserve the aroma. We carry out a two-part selection: first on the vine, where we choose the bunches, and then on a belt in the winery, where we remove the grapes that do meet the necessary conditions. The grapes enter the winery and are transported with the assistance of gravity. The deposits are filled slowly and gently. Depending on the characteristics that we detected when tasting the grapes, we ferment them either in stainless steel deposits or French oak barrels. For years we have worked with our own yeast that has been isolated from the vines by our team. This work is also partly responsible for the Carraovejas character.
The wine was aged in barrels for around twelve months.

The eponymous 2021 Pago de Carraovejas comes from a cooler year when they consider the grapes had exceptional quality. The bottled wine is composed of Tinto Fino with 5% Cabernet Sauvignon and 3% Merlot with 15% alcohol but good freshness and integration of the oak after spending 12 months in 226- and 600-liter barrels. It's medium to full-bodied, with fine tannins, a juicy mouthfeel and a tasty finish. This is a more elegant Carraovejas. It was bottled in the spring of 2023.

Harvest: Occurs in 3 stages. Macabeo within the first fortnight of September, Xarello during the second fortnight in September and Parellada within the first fortnight of October.
First fermentation and vinification: This is a "Methode Traditionnelle" with
soft pressing of the grapes to obtain 60% of the must (flower must). It is decanted and fermented with controlled temperatures of 18ºC for 20 days until it fully develops the primary aromas of the grapes.
Secondary fermentation: takes place in the bottle for 40 days at a temperature of 16ºC and final ageing for 20 months. Residual sugar: 7 gr. per litre.
Color: Pale yellow with green tones. Shiny and clear.
Aromas: Powerful in the nose, clean. Ageing aromas.
Taste: Soft and well structured, long aftertaste and good balance of acidity and sugar contents.
Gastronomy: It should be served chilled between 5ºC and 7ºC. A flute type glass is recommended. Excellent with pasta, red and soft meats and white fish.Painous is unique in that it is a Cava-Joven style sparkling wine, meaning, the wine receives the minimum aging of 9 months. This allows crisp, fresh aromas and flavors to be expressed. It is delicious for aperitif.

This Cabernet Franc is black cherry red in color with aromas of blueberry jam and white pepper spiciness. With wonderful ripeness we were able to make one of our best Cabernet Francs. The wine is very lush across the palate with a silky softness and sweet impression of ripe blueberry fruit. Tannins are very moderate with a nice light texture in the mid palate. This is an easy drinking Cabernet Franc, rich and complete and very enjoyable.
Paradigm Cabernet Franc is made from 85% Cabernet Franc & 15% Cabernet Sauvignon
Paradigm Merlot is made from 98% Merlot - 2% Cabernet Sauvignon.
Deep ruby color with aromas of black cherry and plum, a hint of cedar and soft touch of toasty French oak. Seamless and silky across the palate with a nice mouthcoating texture and nicely balanced acidity for many food pairings. Flavors are similar to the aromas, dark plums and cherries, pomegranate, spice and complimentary sweet vanilla toasty oak. Flavors linger making you want another sip.

Needing plenty of air to show at its best, the 2019 Cabernet Sauvignon Beckstoffer Dr. Crane Vineyard is a sensational, gorgeous Napa Valley Cabernet that delivers the goods like only this region can. Pure Cabernet magic on the nose, with deep blackcurrants, smoked tobacco, lead pencil, and a kiss of spring flowers as well as a beautiful Pessac-Leognan-like scorched earth character, it hits the palate with full-bodied richness, silky tannins, no hard edges, and a great, great finish. It's one of those wines that builds incrementally on the palate and it's only after the second or third sip that you realize how special this wine is. It also offers that rare mix of power and elegance that's the hallmark of all great wines. It needs a couple of hours in the decanter if drinking any time soon. Straw yellow with greenish tints, vivid and brilliant. High intensity and very expressive. Profusion of aromas with traces of mineral. Great volume and ample body leaving a lasting impression from beginning to end.

I think the 2014 Albariño Selección de Añada could be the finest vintage of this characterful long-aging Albariño, from a year with a more moderate 13% alcohol and very high acidity (and low pH) that make the wine fresher and more vibrant. It is developing very slowly and showing quite young after it spent over 30 months with lees in 1,500- and 3,000-liter stainless steel tanks. It has a pale color and an elegant nose with notes of freshly cut grass, white flowers and wet granite. The palate is vibrant with effervescent acidity, and it has a long, dry and tasty finish with an austere sensation, far away from the tropical notes of some past vintages. This is superb and should continue developing nicely in bottle. Bravo! It wasn't bottled until April 2023, and 14,000 bottles were produced.

Icon is a selection from the winery, that is, of the best barrels of the year, basically with Malbec that occupies 85% of the final blend. The selection is made after a year of aging in barrels. In addition, there are earthy notes that project throughout the palate. An old school wine with an austere structure. One for the Cellar.

Gaja Sperss is made from 100 percent Nebbiolo.
Vibrant and intense notes of herbs and spices such as thyme, cloves and black pepper. On the palate the wine is tense, loaded with energy that will need serious ageing to fully develop although extremely approachable in its youth. Impressive fruit concentration, with dark and ripe fruits – prunes and black cherries. Acidity and tannins lift this wine to its freshest expression.
Nebbiolo based wines have not only complexity and structure but also great elegance and finesse. The distinctive silky tannins of the Nebbiolo make it the right wine to drink with meat. Usually a young vintage goes very well with richer dishes because of the stronger tannins; mature Barolos are more suitable with delicate white meat courses or braised meat courses with sauces or concentrated red wines reductions.

The 2019 Barolo Sperss is rich with dark mineral earth, black cherry, and Earl Grey tea. Long and mouthwatering, it has a powerful structure while retaining finesse. It is fantastically balanced, with gripping tannins, fresh acidity, and notes of forested earth and ripe red berries. A wine for the long haul, this is another great and noble wine to drink over the coming three decades.
