Paradigm Cabernet Sauvignon 2021 (half bottle)

Paradigm Cabernet Sauvignon is made from 90% Cabernet Sauvignon 4% Merlot 4% Petit Verdot 2% Cabernet Franc.

20 months in French oak (only about a third of that is new oak) and for 20 more months in bottle before release

Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. This wine shows enough structure to be age-worth, yet soft and balanced enough to enjoy upon release. Flavors linger in this tasty, dense wine. Tastes like Oakville. -Heidi Barrett



Paul Hobbs Russian River Pinot Noir 2022

Paul Hobbs Russian River Pinot Noir is made from 100 percent Pinot Noir.

Sourced predominately from the estates that are defined by their proximity to the coast and Russian River climate, the wine displays vivid crimson and aromas of violet, Morello cherry, and black tea. Velvet tannins on the palate ride along a juicy backbone of flavors such as cranberry, Blood orange, and Damson plum. The finish is long, powered behind a crisp acidity and appealing red clay-like minerality.

 

Review:
Sliced strawberry with bark and stone with some sand undertones. Graphite. Medium-bodied, tight and focused with spices such as pepper and bark. Flavorful finish.

Penedo Borges Icono Malbec is made from 85% Malbec, 10% Cabernet Sauvignon and 5% Petit Verdot

Dark purple color.
Complex aromas of predominent ripe red fruit such as plum, cherry and raspberry with spicy notes.
Chocolate and vanilla flavors from barrel ageing which provide complexity and elegance.

Pernot Belicard Puligny-Montrachet is made from 100 percent Chardonnay.

The grapes come from the village of Puligny Montrachet, from a small parcel of 3.7 acres.

An expressive nose showing floral aromas, butter and woody notes. The mouth is round and suave with fruity notes and great minerality.

Pair with Sole Meunière, Bresse Poultry with morels, Livarot cheese.

Poggio San Polo Rosso di Montalcino 2021

Bright and glossy ruby red in color. On the nose it reveals aromas of small fresh berries and a trace of sour cherry, melded with hints of blackberries and black cherries, followed by a hint of vanilla. A fragrant wine with satisfying intensity. On the palate it is warm, smooth and a medium-bodied with finely-balanced tannins. Dry and sinewy yet fresh with a persistent, aromatic finish.

It naturally accompanies dishes that are typical of Tuscan cuisine with its bold, authentic flavors, such as pasta and risottos made with mushrooms or truffles, pork, grilled meats and medium-matured cheeses.



 Review:

Notes of ripe cherries, dried flowers and walnuts with hints of anisette and licorice. Medium- to full-bodied, compact and dense with creamy tannins and steady acidity. Weighty and structured. Drink or hold.

Pomerols H.B. Rose 2023

Pomerols Beauvignac Syrah Rose is 100% Syrah

Pink colored, firm in the style of a Tavel rosé, the wine shows strawberry aromas, candy notes on the nose and cherry and pomegranate flavors on the palate. The wine is silky, elegant, crisp and refreshing.

The Syrah is bled off after 8 hours of maceration.

Quinta de Fafide Reserva Branco 2019

Quinta de Fafide Reserva Branco is made from 50% Codega do Larinho, 30% Rabigato, 20% Viosinho

In this wine we look for an aromatic concentration and high acidity of the grapes from the very old traditional vineyards of high altitude in Douro Superior, about 550 meters above sea level, showing the full character of the varieties of indigenous Douro old vines, giving very mineral and creamy wines. Mineral aroma, citrus and tropical fruit, fresh and full-bodied on the palate, buttery texture and complexity provided by fermentation and ageing in barrels.

Quinta do Cotto Vintage Port 1989 (half-bottle)

Quinta do Cotto, Vintage Port 1989 has been pulled from a Gentleman's cellar, all wines from this cellar have been purchased by the owner either from the importer or direct from winery. They stayed in his cellar until being moved to the Timeless Wines warehouse.

Quintessa Red 2022

  Quintessa Red 2022 is made from 93% Cabernet Sauvignon, 4% Cabernet Franc, 1% Carménère, 1% Merlot, 1% Petit Verdot.


The 2022 Quintessa is a charming wine, opening with intense aromas of black cherry and cassis that are complemented by notes of tobacco, bay laurel, cedar, and dark chocolate. Plush and inviting on entry, this wine’s flavors align with its aromas. The palate reveals dark fruits and an undertone of crushed rocks, tar, and graphite. On the finish, this vintage displays the signature fine-grained tannin of their Quintessa terroir, backed by voluminous texture and fruit.


Review:

Such an incredible wine here - one of the stars of the September releases. Smells amazing, cooling blueberries with fragrant blackcurrants, edges of florality - totally inviting scents. Full and filling in the mouth, this is ample with such a layered effect, super vertical and elongated. Tight and a little tense but it really works - such balance between black fruit, dried herbs, high acidity and a profound structure. Refined and beautifully presented. So much life, so much energy - this is pure class. A wine you don't want to put down. Feels hands off despite such concentration and power. Ends salty with sticky liquorice, mint and cooling wet stones. You could definitely drink this now but it will age too! 1% Merlot and 1% Petit Verdot complete the blend. One of the final few vintages with Rodrigo Soto at the helm - he stepped down last year to concentrate on his family project Far Mountain in Sonoma Valley which is worth following. Renato Ratti Rocche dell'Annunziata Barolo 2019

Renato Ratti Rocche dell'Annunziata Barolo is made from 100 percent Nebbiolo.  Grapes handpicked in the month of October, de-stemmed and pressed. The alcoholic fermentation takes place in temperature-controlled stainless steel containers. Contact with the skins lasts approximately three to four weeks and includes fermentation and subsequent post-fermentation maceration with the traditional submerged cap system. The malolactic fermentation takes place in steel containers.

The Rocche dell'Annunziata vineyard is historically known as one of the most important in the Barolo zone. In his Barolo Chart, Renato Ratti had already underscored this by entering it in the 1st Category class. Situated at about 300 meters above sea level and with a south-east exposure, it extends over approximately 1 hectare. Rich with typical blue marl interspersed between veins of sand, the earth confers an extraordinary elegance and depth, combined with fine and persistent scents of roses and licorice. A prestigious subzone engenders a Barolo that holds within it suggestions of a radiant future. Warm, persistent, rich: in a word, sumptuous.

The label bears the coat of arms of the local noble family, with a black hawk against a gilt backdrop. The Latin inscription “Probasti me et cogniusti me” means “You tried me, you knew me.”
The Bottle: The Albeisa – named after the city of Alba – is the iconic bottle created by Renato Ratti in 1973, desired as a way of identifying the uniqueness of a territory and its wines.

A garnet red. Delicate and persistent fragrance with trace scents of licorice, rose and violet. Full-flavored, warm, with extremely elegant tannins offering long persistence. A great wine for important dishes, red meats roasted on a spit or grilled, game, dishes of gourmet white and red meats and ripe cheeses.

Review:

Lots of dried flowers here give a perfumed nature to it with berries and citrus. Hibiscus water, too. Full-bodied and chewy with lots of tannins and vivid acidity. Subtle plum and strawberry character. Muscular and formed..

Ricudda Chianti Classico 2022

Intense ruby red color with purple tints.
On the nose, the wine shows some intense notes of red fruits, especially cherry and slight hints of oak.
In the mouth, it has a good structure, great softness and it is pleasant to drink. Predominant notes of red fruits, with slight spiciness.

Pair with first courses with game, grilled meats, fresh and aged cheeses such as pecorino.
