Hiyaoroshi is a general term referring to sake that has been pasteurized once in the winter and then allowed to mature over the summer before distribution in autumn. The Japan Sake Brewers Association designates September 9th as the official start for Hiyaoroshi sales. (Essentially aged Namazume)
September 9th is known as Kiku-no-Sekku (“Chrysanthemum Festival”), where hundreds of chrysanthemums are displayed around various venues and chrysanthemum sake is served. The chrysanthemum (kiku) was brought to Japan from China during the Nara period. In 1183, it was adopted as the Imperial Seal of Japan, and during the Meiji period no one but the Emperor could use it. Nowadays it still represents the authority of the emperor and you can see it everywhere in Japan.
Aromas are forward, fresh, and fruity in the nose with notes of sweet melon, cherries, and hints of vanilla. Flavors on the palate evoke feelings of the season with pumpkin pie, roasted nuts, and stewed plums. It boasts an inky/purple color in addition to a gorgeous perfume of crushed rocks, jammy black fruits, charcoal and graphite. Its tannins move round freely and a minted finale comes forward. Its dark fruit is tasty, darkens on the finish, where tar and char from its oak enter. It is all very much together, a bundle of harmony, and will gain local attributes as it ages.

Review:
"Up with the crème de la crème of the vintage, the 2018 Châteauneuf Du Pape Vieilles Vignes is a bigger, richer wine than the Les Origines cuvée and has a beautiful core of smoked black fruits, candied violets, peppery garrigue, and scorched earth-like aromas and flavors. Playing in the medium to full-bodied end of the spectrum, it’s flawlessly balanced and has terrific tannins, a stacked mid-palate, and a great finish. It certainly shows the more front end-loaded, fleshy, mildly concentrated style of the 2018 vintage, yet the balance is top-notch, and it’s just a thrill to drink today. It should evolve nicely for 10-15 years."

Robert Mondavi’s vision was to elevate Napa to the world stage. In celebration of his achievement, our Napa Tier wines are sourced from distinctive vineyards throughout the Napa Valley and truly emulate a classic Napa Valley style.
Nearly half of this year’s blend is sourced from the deep, well-drained soils of Oakville, which provides gorgeously dark, supple wines with fine tannins. Stags Leap District, Oak Knoll, Yountville, and Rutherford also find their place in the bottle, with the varying mesoclimates and soils of these vineyards integrating seamlessly into a 100% Napa Valley blend.
Review:
"Dominated by 80% Cabernet Sauvignon with smaller percentages of the other Bordeaux red grapes, this wine speaks of heritage and prestige. Broad, silky, and powerful, the graceful liquid is enhanced by dark chocolate, white pepper, black plum, violets, and sweet earth."
