Michel Thomas Sancerre Blanc Silex is 100 percent Sauvignon Blanc.
Intensely aromatic and concentrated Sauvignon from the Silex soils, this is a wine of great concentration and excellent balance. Aromas of fresh herbs, with flavors of citrus, ripe gooseberry, apple and a hint of gunflint. A delicious apéritif and the classic match for goat cheese or asparagus.
The special bottling "Silex" is limited each year to between 400-500 cases. They grow grapes on three soil types: 40% Terre Blanche-Argilo-Calcaire, 40% Caillottes-calcaire, 20% Le Roc-Silex. This wine come from the hardest stone soil on the vineyard giving it pleasant notes of fruit and a very dry flavor: This wine is bottled using traditional methods without filtration, allowing for a authentic and natural taste to the wine.

Terroir (soil type) is a blend of "Caillottes" and "Terre Blanche".

The alcoholic fermentation is done in temperature controlled stainless steel tanks.
Right before bottling, the wine is fined with Bentonite (very light filtration with oenologic clay).
Tasting Notes:
Light, bright pink. Redcurrant, strawberry and chalk on the nose, with a touch of singed orange gaining strength with air. Dusty red fruit and citrus flavors are braced by tangy minerality, which adds lift and cut. Uncompromising in the best way, finishing with excellent clarity and echoes of lemon and orange zest.
Food pairings:
This is a very versatile wine. You can have it on its own in the summer time as an apéritif. But it is also excellent with Hors d'Oeuvres and terrines. It will compliment any white meat dish and poultry. You can also enjoy it with salmon or exotic food (slightly spicy sushi).

Cuvee harvested on the south facing land. The limestone base of the seat is emphasized by a thin bed of Kimmeridgian marl leaving a grayish underground, earth colored by white marl, ground vineyards par excellence. The wine is matured in oak barrel and pipe, second fermentation in the bottle with a minimum of 18 months aging. Reflects the white varieties of the Barrois hillsides.

The Domaine Michel Thomas Estate
Michel Thomas and his son Laurent took over the estate in 1970 from Michel's father, who started in 1946. The total production is about 10,000-12,000 cases per year. They export 65-70% of their production, mainly to Japan and Russia.

Today they farm 40 parcels located in four villages, totalling 17 hectares (42 acres): 11 hectares Sauvignon, 6 hectares Pinot Noir. Long Shadows Saggi Red is made with 58% Sangiovese, 30% Cabernet Sauvignon 12% Syrah. Among Tuscany's oldest and most prestigious wine families, Ambrogio and Giovanni Folonari teamed with Allen Shoup to produce a wine that showcases Washington State's terroir with plenty of Italian character. Saggi (meaning "wisdom") is a stunning blend of two outstanding Washington Sangiovese vineyards. Candy Mountain Sangiovese gives the wine its dark fruit flavors and appealing notes of anise. Dick Boushey's Yakima Valley Sangiovese, planted in 1992, adds vibrancy and liveliness. Because Cabernet Sauvignon has the potential to overtake Sangiovese, the Folonaris work closely with Sagemoor Vineyards to carefully select blocks of Cabernet they know from experience deliver elegant character and refined tannins. Syrah, also from Sagemoor, adds to the wine's dark color and rich mid-palate.

The 2018 Red Wine Saggi is mostly Candy Mountain Sangiovese (58%) with Cabernet Sauvignon (30%) and Syrah (12%). Gilles Nicault has created a sensational, one-of-a-kind blend here. The wine explodes out of the glass with potpourri and anise tones alongside a beautiful core of red and dark fruits. The palate offers tobacco, milk chocolate and boysenberry flavors, serious depth and concentration, insanely good range and an opulent sense of texture. Complex and delicious with firm tannins and a touch of hedonism, this sensational and novel blend will provide drinking enjoyment for another 15 years to come.

This dry Rosé is very aromatic on the fruitiness with a great style and elegance.
Average age of the vines is 25 years old.
We produce a part of this cuvee with 12 hours skin maceration and another part from directly pressed grapes.
Wine was slightly filtered before bottling to insure the wine remains stable.
This wine is the perfect friend for barbecue, salads and of course aperitif. This is ideal for warm days in the garden, as well as elegant poultry dishes.
