Ther is a long aging on lees to refine the flavors and develop complex flavors. If necessary, we make a collage of Bentonite to remove proteins and a passing cold which eliminates tartar crystals. Corinne Perchaud and her husband Jean-Pierre Grossot began working in the Domaine in 1980, but the estate was originally founded in 1920. They are the third generation of winemakers at this family estate, located in the village of Fleys, in the heart of the Chablis appellation.
"A very good to excellent Chablis producer making some wines in tank and others in barrel; the former are outstanding" - Anthony Dias Blue's pocket guide to wine 2006
The Corinne Perchaud Vineyard
They farm 18 hectares (44.5 acres) of vines: 13 A.O.C. Chablis and 5 hectares Premier Cru. The wines are only tank fermented, except the Fourneaux that gets 25% barrel fermented wine added into the final blend. The owners take great care to produce exceptional Chablis wine by keeping the lively Chardonnay fruit and the unique mineral quality imparted by the Kimmeridgian soil, the fruity acidity and bouquet in perfect balance. Wine produced from grapes coming from the best vineyards from Sierra de Montilla and Moriles Alto (top quality area)
Aged in American Oak for 8 years
Color: Amber color with some topaz reflections.
An intense and elegant expression from the oxidative ageing process, with some dry fruits characters. The aromas are reminiscent of its ancestor - Fino. Velvety, warm, round and well-structured on the palate with almond flavors. A well-balanced wine.
Wonderful as an aperitif and to accompany soups and consommés. Extremely good where its distinctive taste adds unique character to a wide range of dishes. Try also with marinated meats and selfish as aperitif.
Tua Rita Giusto di Notri is made from 60% Cabernet Sauvignon, 30% Merlot and 10% Cabernet Franc.
The word "Giusto" refers to the name of the Patron Saint of Suvereto (the hilltop Tuscan town where Tua Rita is located) and "Notri" is the name of the winery's exact location.
Giusto di Notri is a Bordeaux-inspired blend of 60% Cabernet Sauvignon, 30% Merlot and 10% Cabernet Franc, selectively harvested in September. After a gentle pressing, the juice and skins macerate for a lengthy period of 25-30 days to add concentration and depth to the final wine. The wine is then aged for 18-20 months in French oak barrels and refined six months in bottle before release.
Deep purple in color, Giusto di Notri offers abundant aromas of blackberry, plum and currants with underpinnings of coriander, violet and a touch of vanilla. Full-bodied, with ripe, fine tannins, and a silky texture, this is a stunning wine with great aging potential.
Ideal for barbecued ribs, steaks, grilled meats and medium-aged cheeses.
Review:
Lots of incense to the aromas with sandalwood and lavender. Currants, blackberries. and fresh herbs, too. Full-bodied and very rich, with a powerful, structured mid-palate and a long, longfinish. A wine for the future. Needs four to five years to soften. Best after 2026.
-James Suckling 97 Points
This beautiful wine opens with aromas of cassis, blackberry, and earthy plum on the nose, with a touch of cedar that elegantly underlies the rich dark fruits on the nose. The wine is rich and full bodied on the palate, the acidity is supple, supporting the layers of plum, dark cherry and dusty minerality. Alongside these you have a touch of espresso bean and slight vanilla. The smooth tannins follow through to drive the finish, giving longevity to the palate.
Review: Aromas of black cherries, cassis, spice box, walnut and graphite. Firm and lengthy with a full body and compact tannin structure. Dense and wide with a chocolaty finish. - James Suckling 93 Points |
A classic balance between generous red and black fruits and firm tannins shows in this full-bodied wine as it unfolds black cherries, blackberries, oak char and black pepper. It's grippy in texture—perfect for a steak or lamb chop.
