This wine comes from a parcel planted on a pebbled soil covered with stones, whose geology is typical of the grands crus from the Rhone Valley (a base made of marine molasse from the Miocene period covered with an alpine diluvium from the Villafranchian period). 100 % destemming, cold maceration during 48 h., pneumatic pressing, fermentation at 18° C.

To pair with: roasted and or spicy chicken, duck, goose, fish soup, white meat, seafood and a lot of fishes (tuna, John Dorry, red mulet, etc...).Quite all Asian cuisine. Dishes with garlic, dishes with tomatoes.

"A blend of 60% Grenache, 20% Syrah, 10% Cinsault and 10% Clairette, the 2022 Tavel La Reine des Bois is a touch darker in hue than its stablemate, the La Dame Rousse, but it's still not among the darkest of Tavels in the glass. That's perfectly okay, as the aromas and flavors are textbook for the appellation: crushed stone, flowering garrigue, ripe cherries and mouthwatering strawberries, all capped off by refreshing citrus-zest notes on the lengthy finish. The 2016 Cabernet Sauvignon Coeur de Vallée comes all from Beckstoffer’s portion of the To Kalon Vineyard and it’s a thrill a minute, offering awesome notes of blue fruits, chocolate, incense, candied violets, and high-class cigar tobacco. As seamless and elegant as they come, yet also opulent and sexy, this remarkable Cabernet Sauvignon could come from nowhere else in the world. Drink it over the coming 2-3 decades.

This is the last vintage when this wine will come exclusively from Beckstoffer’s To Kalon vineyard. In the future it will come (more and more) from Morlet’s own new vineyard in Oakville—just across from To Kalon. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. Full-bodied and laden with densely packed, muscular fruit, it has a rock-solid frame of ripe, grainy tannins and seamless freshness, finishing very long with those To Kalon spices lingering with fantastic persistence. 250 cases produced, to be released in the fall of 2019.

Mt Brave Malbec is made from 100 percent Malbec.

On the Palate of the 2016 Mt. Brave Malbec killer spice overlays rich boysenberry and black currants. A pop of fruit carries across to the finish which is clearly mountain structure based.

It offers a vibrant, focused, savory style in its blue fruits, graphite, and lead pencil aromatics, and has a concentrated, layered style on the palate. The 2016 Malbec Mt. Veeder (100% Malbec) is very deep purple-black in color and reveals stunning black and red cherries, black plums and violets with wafts of unsmoked cigars and mossy bark. Full, concentrated and seductive in the mouth, it has a solid line of fine-grained tannins and loads of bold, perfumed fruit, finishing long. 484 cases produced.

This shows a vivid boysenberry and blackberry fruit profile, laced with licorice, roasted apple wood and violet notes, all backed by a solidly grippy structure and a late zing of minerality. Best from 2021 through 2038. 6,441 cases made.

Mt Monster Chardonnay is made from 100 percent Chardonnay. 

Gentle pressing and free run juices create the base of this wine. 

Traditionally Mt Monster Chardonnay is 100% fermented and matured in stainless steel, this receives some lees contact to add texture and complexity to the palate, but essentially this wine is pure Chardonnay fruit.

Review & Tasting notes:

Bright straw color, with hints of lime green. Fresh figs and melon, with vibrant lemon citrus fruit. The nose also shows some yeast complexity from extended lees contact. Fresh tangy melon fruit flavors, & a clean acid finish. Although it may benefit from up to 2 years maturation in bottle, this wine is best consumed when young and fresh.

Ornato Prosecco is made from 100 percent Glera.

Typical crisp and delicate perlage. Pale yellow color. Delicate and fragrant bouquet, with fruity notes of banana and apple and notes of acacia flowers. Fresh and light on the palate with balanced acidity and body harmony with a pleasant dry aftertaste.

Grapes are accurately selected both for area of origin and quality. The soft pressed must is stored in steel tanks for the static cold decanting. The fermentation with selected yeasts is made at a controlled constant temperature and is completed in 8-10 days. The wine is then filtered in steel tanks with the addition of saccharose and selected yeasts for the second fermentation (Martinotti Charmot Method).

Ideal as an aperitif, it is a perfect combination to hors d’oeuvres and delicate first courses.

Paradigm Cabernet Sauvignon is made from 90% Cabernet Sauvignon, 8% Merlot, 1% Petit Verdot, 1% Cabernet Franc

Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Dark Cabernet color with beautiful aromas of black cherry, cassis, plus 5-spice, vanilla. Big, ripe and mouthcoating across the palate. The flavors are similar to the aromas with ripe fruit, berry/cherry pie, moderate tannins, and nice length. This wine shows enough structure to be age-worth, yet soft and balanced enough to enjoy upon release. Flavors linger in this tasty, dense wine. Tastes like Oakville. -Heidi Barrett

This is a classic, workhorse styled Cabernet from winemaker Heidi Barrett with lots to love. In 2019, Chris Pearmund worked with sixteen Virginia wineries to create a blended wine with grapes from each participating vineyard to commemorate the 400th Anniversary of Winemaking in Virginia. A portion of the wine’s proceeds were donated to museums and events that would contribute to tourism in the Commonwealth and foster a broader understanding of Virginia’s cultures and cuisines. This idea sparked another movement to celebrate through wine, and Cameo seemed a perfect way to commemorate the milestone moment in history.

Cameo Rosé offers aromas of raspberry, strawberry, and peach. Dry on the palate, silky tannins and minerality are balanced by strawberry and orange zest flavors.

Pierre Olivier Sparkling Rose NV is a value sparkling rosé, made with Tempranillo grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.
This wine is aromatized with a very little amount of Raspberry flavor, giving a nice mouthfeel, with an extra aromatic boost.

The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.

Rebuli Prosecco Cartizze Grand Cru is a noble wine with a clear straw color, it exhibits pleasant and delicate fruity flavors and is a perfect match to desserts.

description: This is a Pét-Nat Prosecco. 
Pét-Nat is short for Pétillant Naturel (French for Naturally Sparkling).
It is the same vinification method as "Methode Ancestrale" used in Bugey Cerdon. 
The wine is bottled before the end of the first alcoholic fermentation. Unlike Champagne method (in which the base wine completes his first fermentation in tank and only the secondary fermentation takes place in the bottle adding sugar and yeast also known as liqueur de tirage, which will requires the wine to be disgorged), Pét-Nat method doesn't imply the wine will be filtered or disgorged upon fermentation. 
This gives Pét-Nat its light and fizzy mouthfeel, generally with a little sweetness and low alcohol. Most of the times, bottles are slightly cloudy from the presence of lees.
The wine is vibrant with complex lemon citrus, pear and verbena. It finishes dry with delicate yeasty notes.

Extremely digestible wine, suitable for casual moments or tasting the typical sausages of the local tradition such as the sopressa. Great with pizza daisy.

Rebuli Prosecco is a noble wine with a bright straw color, made from a selection of Prosecco grapes, which highlights the flavors and perfumes of the area. It is ideal for important occasions and as an aperitif. It is also excellent with risotto and noble meat.

This large Spumante estate with just over 100 acres of vines produces high-quality Prosecco. The non-vintage Rebuli Prosecco di Valdobbiadene Extra Dry is light-bodied and flowery with plenty of white peach, orange and pineapple notes in its exotic aromatics and flavors. It is off-dry, but most consumers would consider it to be a dry sparkling wine. Drink it over the next 12-18 months.-Robert Parker 90 Points

This pale rosé colored spumante boasts a rich mousse and persistent bubbles. The intense and fruity bouquet of raspberry, wild strawberry, pink grapefruit is intertwined with almond, rose petals and balsamic notes. Rebuli Prosecco Superiore Valdobbiadene Brut Zerogrammi NV  is made from 100% Glera (Known as Prosecco)

Color: Straw yellow with greenish reflections. Compact and durable foam, fine perlage.
Nose: very intense creating the scents of flower, light notes of peach, pear, almond blossom, tarragon and mineral notes.
Taste: dry, smooth and rich in the mouth. Its floral taste recalls acacia flowers. Aromatic and balanced finish
