The Cave de Pomerols Estate
Founded in 1932, this Cave Cooperative is located in the top commune of Pomerols, located between the garrigue of Pezenas and the sea dominated by the Mont St Clair in Sete. The co-op has merged with the Cave de Castelmau de Guers. They include 320 members and produce 55,000 hectoliters of wine (600,000 cases).
The Cave de Pomerols Vineyard
The members control 1,200 hectares of vineyard land (2,964 acres) of which 330 hectares (815.1 acres) are Picpoul de Pinet. Six communes are entitled to the name Picpoul de Pinet: Florensac, Pomerols, Pinet, Castelnau de Guers, Montagnac, Meze. The Pomerols vineyards stretch over vast sun-light terraces with clay/calcareous soils.

Pét-Nat is short for Pétillant Naturel (French for Naturally Sparkling).
It is the same vinification method as "Methode Ancestrale" used in Bugey Cerdon.
The wine is bottled before the end of the first alcoholic fermentation. Unlike Champagne method (in which the base wine completes his first fermentation in tank and only the secondary fermentation takes place in the bottle adding sugar and yeast also known as liqueur de tirage, which will requires the wine to be disgorged), Pét-Nat method doesn't imply the wine will be filtered or disgorged upon fermentation.
This gives Pét-Nat its light and fizzy mouthfeel, generally with a little sweetness and low alcohol. Most of the times, bottles are slightly cloudy from the presence of lees.
The wine is vibrant with complex lemon citrus, pear and verbena. It finishes dry with delicate yeasty notes.

Fermentation: Processed according to the traditional method of fermentation in yeast bottles. Is normal his natural “bottom” deposit in the bottle, which is why it is brilliant or velvety straw yellow if shaken; the bubble development is brilliant.
Extremely digestible wine, suitable for casual moments or tasting the typical sausages of the local tradition such as the sopressa. Great with pizza daisy.

Venancio da Costa Lima Palmela Reserva is made from 100% Castelao (also known as Periquita)
Intense garnet color, complex nose with touches of ripe fruit, jam and spices, full-bodied flavor and a very balanced finish.
100% Castelao (also known as "Periquita" and "Joao de Santarem". As the most widely-grown red grape variety in Portugal it is still often referred to in Portuguese as Periquita, although that name is legally owned by José Maria da Fonseca in the Setúbal Peninsula outside of Lisbon. It is highly adaptable to different climatic conditions and its remarkable versatility enables winemakers to make a range of wines – from the easy drinking and quaffable reds and rosados to the powerful and intense reds perfectly suited to lengthy cellaring. Castelão comes into its own and is most expressive in the Sétubal Peninsula, where it makes meaty and intense wines with aromas of red berries and blue flowers that marry well with the deft use of oak.
Made from 45 year old vines.
Classic vinification at controlled temperature (25 °C) with prolonged maceration for phenolic extraction. Wine went through malolactic fermentation.
Wine was slightly fitered before bottling to avoid sedimentation in the bottle and to ensure stability.

Le Jade Chardonnay is made from 100% Chardonnay
The wine comes from south-facing vineyards planted on clay and limestone hills overlooking the Etang de Thau, a coastal lagoon situated between the port of Sète and Cap d'Agde.
Le Jade Chardonnay offers a wonderful yellow color, a complex nose of white flowers, mild tobacco and vanilla. Rich and full-bodied mouthfeel; concentrated with just a touch of sweetness.
Serve with a gratin of scallops, pan-fried sole, or grilled oysters with shallots, parsley and a touch of cream. Also great with goat cheese or chocolate cake!
Le Jade Picpoul de Pinet is made from 100% Picpoul de Pinet
Pale straw color. Delicate white flower, citrus and juicy pear aromas. Fresh, crisp, and bright acidity with mineral and saline accents. Well-balanced and easy-drinking.

The grapes are harvested very early in the morning to maintain freshness, the alcoholic fermentation occurs at 14-15°C. When the alcoholic fermentation finishes, one part of the wine is kept on a pump-over programme. Once the wine has been blended it is clarified, then undergoes cold stabilization and then later filtered through soil. On the bottling line it is filtered again through a sterile sheet and a membrane to ensure that it is micro-biologically stable.
Serve with shellfish, fish and sushi.
Hommage Blanc is made with 75% Roussanne and 25% Viognier. 2019 was the first vintage with 20% of the fruits coming from the Estate, the rest comes from James Berry, Glenrose and Adelaida. You will love this wine because of its perfume and its mouthfeel. Aged in oak for 6 months, it is elegant with a nice texture.
The wine has a refined bouquet of honeysuckle and some tropical notes. Nicely balanced, it has a great texture, a lingering finish with a beautiful minerality. To describe it I would use the word elegance. A beautifull white wine that can be aged for 8 years with an optimum drinking window between 3 to 6 years and ideal temperature to serve at 52F.

"The flagship white, the 2018 Hommage Blanc is a deeper, richer white based on 75% Roussanne and 25% Viognier that was brought up in 30% new French oak. Lots of white peach, honeysuckle, orange blossom, and hints of citrus all emerge from the glass, and it offers medium to full body, hints of spice and brioche, a rounded, supple texture, and outstanding length. It's going to shine on the dinner table. I expect it to put on weight with a year in bottle and keep for over a decade."

Segries Secret Grange Lirac Rouge is made from 50% Grenache and 50% Syrah.
This is a new wine for Chateau de Segries. 2013 is the first vintage.
The wine is dark and inky.
The aromas are intense and complex. It has fruit flavors of course, Strawberry and Blackberry, but it also have some interesting spice components, garrigue, pepper and licorice.
The finish is long and very pleasant as the tannins are round and well integrated.
La Grange is the name of the parcel where the grapes are grown. The soil is Clay and Limestone.
The average age of the vines is 80 years old.

This full-bodied blend is fabulously concentrated and lush, with ripe fruit flavors of raspberries and stone fruits, an intriguing hint of almond paste and a rich, long finish tinged with licorice. Mordoree Cotes du Rhone Dame Rousse Rose is made from 4 0% Grenache, 35% Syrah, 15% Cinsault, 5% Carignan, 5% Mourvèdre

"The 2019 Cotes Du Rhone La Dame Rousse Rose offers another level of elegance and purity as well as complexity. Giving up notions of ripe strawberries, cherry blossoms, white flowers, and a kiss of minerality, it’s a beautifully textured, medium to full-bodied, incredibly balanced effort that actually has a touch more richness than the Tavel, although both are rich, textured rosés geared for the table. As with the Tavel, drink this beauty any time over the coming year or so."
