Yellow strawâ€colored, medium low intensity. Pungent, delicate and complex, with clear almonds notes and autolysis. The mouth is slightly soft, wityhout being sweet, the palate is round and fat with an excellent structure, volume and character but at the same time, the wine is still very fresh and saline. Long finish for this persistent wine.

Colmant Brut Chardonnay is made from 100 percent Chardonnay (Franschhoek and Robertson).

Ageing: This wine spends a minimum of 45 months on the lees at a consistent temperature of 14C before degorgement.
Tasting: Delicate light gold color with a lime-green hue. The nose is fresh, lemony and floral with notes of green apple, followed by yeasty and biscuity aromas brought by the lengthy maturation on the lees. Very fine bead of bubbles with a persistent mousse. Opulent on the palate, this wine shows a harmonious balance between fresh zestiness, mineral complexity and a warm breadth of leesy creaminess. It promises to develop great texture over time.
Drinking tips: Ideal with pan fried scallops or line fish "au beurre blanc", it is also the oyster's best friend and will enhance the flavors of parmesan, asparagus, artichokes, parma ham,…

A blanc de blanc with the heart of Chardonnay, the NV Brut Chardonnay has focused citrus tones on the nose with notes of yellow pear and green apple. The oak is subtle here, with a solid beam of acidity through the mid-palate. Lovely salmon pink color. A very delicate nose of strawberry and redcurrant fruit with floral undertones. There is a silky richness on the palate full of red berries balanced with a subtle bready texture. Very accessible. Will also develop nicely over time.

The 2021 Cabernet Sauvignon is smoking good, with a full-bodied, rich, opulent wine that has classic cassis and darker blue fruits as well as leafy tobacco, baking spice, and bouquet garni notes. This textured, ripe, sexy wine stays nicely balanced, has ripe tannins, and a great finish. It's another awesome value.

Celler Vall Llach Idus
Since its founding in the early 1990s by celebrated singer Lluís Llach and notary Enric Costa, Celler Vall Llach has committed itself to rigorous quality standards. Located in the tiny mountain town of Porrera in the D.O.Q. Priorat, the winery is now headed by Enric’s son Albert as winemaker, general manager and co-owner.
The magnificent century-old estate vineyards boast 60- to 90-year-old Cariñena and Garnacha vines as well as newer plantings of Garnacha, Cabernet Sauvignon, Merlot and Syrah that add complexity to Vall Llach’s range of widely acclaimed wines. Priorat’s notoriously stingy llicorella (fractured black slate) hillsides produce extremely low yields of intensely flavored grapes.
The Celler makes this wine from grapes from very old vines, some of which are centuries old, belonging to selected farms, owned by farmers who have been collaborating with us since our foundation. From the Cellar, we make a thorough follow-up of each of the production processes. And this collaboration with the farmers, who bring us inherited traditions and customs, allows Celler Vall Llach to identify this wine with the effort and uniqueness of the cultivation of these lands. Idus is a local wine. AGING The wine was transferred to 225 and 300 litre second wine barrels of light- and medium-toasted fine grained new French oak.
