This single vineyard wine is always produced from the same vineyard that is also used to make the Gran Reserva wine.
Licenciado shows a ruby red color and outstanding aromas of wild berries, vanilla and spice. The palate is well-balanced, rounded and elegant, and offers black pepper, ripe black fruits and vanilla flavors. Its freshness, oak ageing and high extraction guarantee a longevity of at least 10 years after the year of harvest.

An exotic experience which shifts your mind to another place. Cassis, brambles and succulent cherry. White pepper, classic garrigue and the strong floral perfume of crushed violets. Light and elegant, but structured with a fresh acidity. To experience the best this wine has to offer, decanting is suggested.
The grapes were fermented 40% whole bunch in a 5000 litre wooden fermenter with gentle pigeage throughout. The process allowed for a long extraction period which lends to the fruit expression of this wine. The wine was left for a 30 day extended maceration on the skins and then pressed in a traditional baskets press. Matured in 500 litre barrels for 10 months (35% new). Time in the bottle will allow integration, the deepening of layers and full expression of the fruit.

The 2018 Cabernet Sauvignon Spring Mountain District is a monster of a mountain Cabernet that has a primordial bouquet of blackcurrants, smoked earth, chocolate, and graphite. While Spring Mountain wines tend to be more aromatic and complex right out of the gate, that’s not the case here, and this is going to need bottle age to round into form. Full-bodied on the palate, with a rich, concentrated mouthfeel, it has serious tannins, notable purity of fruit, and a great finish. With air, it picks up more and more classic Spring Mountain floral and exotic notes, and it’s flawlessly balanced, with gorgeous tannins and a great, great finish. This is a brilliant wine in the lineup and unquestionably one of the true gems from Spring Mountain in 2018. Give bottles 4-5 years and enjoy over the following 2-3 decades.

Long Shadows Chester Kidder is made from 60% Cabernet Sauvignon, 25% Syrah and 15% Petit Verdot
Allen Shoup named this wine in honor of his mother, Elizabeth Chester, and his grandmother, Maggie Kidder. He selected Long Shadows' director of winemaking and viticulture, Gilles Nicault, to craft this New World blend of Cabernet Sauvignon, Syrah and other classic Bordeaux varieties.
Select Cabernet Sauvignon lots underwent an extended maceration of 40 days to produce supple yet firm tannins that stand up to 30 months of barrel aging in tight-grained French oak barrels (85% new). The extra time in barrel helped to integrate the fruit, enhance the mid-palate with an extra layer of complexity, and provide an appealing earthiness to the finish.

The Cabernet Sauvignon-dominated 2017 Chester Kidder is another more closed, reserved wine that's loaded with potential. Cassis, toasted spices, violets, and leafy herb notes give way to a rich, full-bodied red that has ripe, velvety tannins, a rounded, mouth-filling texture, and one heck of a great finish. Give bottles 3-5 years if you can and it should be very long lived.

It's another brilliant wine from this team and has vibrant plum and darker, almost blue fruits as well as spicy oak, chocolate, graphite, and scorched earth aromas and flavors. Balanced and medium to full-bodied, with a terrific sense of freshness as well as building tannins, it's going to benefit from 2-4 years of bottle age and have two decades of longevity.

Long Shadows Feather Cabernet Sauvignon is made from 100 percent Washington State Cabernet.
Acclaimed Napa Valley vintner Randy Dunn has a reputation for producing world-class Cabernet Sauvignon. He brings more than four decades of winemaking experience to the Columbia Valley to produce Feather, his only wine made outside of California.
Tasting Notes: Deep crimson colored with pure and expressive Cabernet Sauvignon character. Generous aromas and flavors of dark fruits, violets, coffee and toasted herbs combine with a textured mid-palate to deliver a big, yet focused, wine with polished tannins and persistent finish.
Winemaking: Grapes were hand-harvested at the peak of ripeness, then lightly crushed and fermented in small stainless steel tanks. Once fermentation was underway, the cap was pumped over aggressively to extract color and structure. As fermentation neared completion, pump overs were handled more gently to further extract color and flavors without imparting harsh tannins. Like the last several growing seasons, 2016 was another hot year that required extra care in the vineyards. Building on the success of our canopy managment program over the last few vintages, we worked with growers throughout the season to encourage growth of the canes and outside foliage to protect against the sun while opening up the fruit zone for even maturation. Warm temperatures in the fall hastened ripening, but the Columbia Valley's cool autumn nights protected the grapes' acidity, yielding bright, vibrant wines that will drink well in their youth but also promise to bring enjoyement to those who cellar.
A variety of fermentation methods were used to enhance complexity and richness in this classic Bordeaux blend. Hand-harvested Cabernet was fermented in 400L French oak barrels that were gently rolled throughout fermentation to integrate the oak with refined, dark fruit flavors and give the wine its silky mouthfeel. "The 2018 Red Wine Pirouette blends 68% Cabernet Sauvignon with 22% Stone Tree Vineyard Merlot, and 10% Dionysus Vineyard Petit Verdot. The wine was aged 22 months in 85% new French oak prior to bottling. Aromatically beautiful, you are greeted to black rose petals and blackberry compote tones that mingle with wintergreen and chocolate covered espresso bean accents. Kershaw Chardonnay Deconstructed Lake District Bokkeveld Shale CY95 is made from 100 percent Chardonnay.
The inspiration for this Chardonnay stems from my belief that the Elgin region has both a signature grape as well as particular terroirs within its demarcated boundary that reflect regional credentials. This Chardonnay was selected from a sub-region of Elgin from a specific vineyard and an individual clone.
Tasting Notes: Sourced from a parcel in the Western part of Elgin the 95 clone is known for its excellent quality creating wines that are aromatic, fuller bodied and rich yet tightly structured, well–balanced with length of flavor, managing to show restraint and mouth-watering passivity with a great line through the palate and fruit veering towards white peach flesh and nectarine. On Bokkeveld Shales it brings amplified perfume on the nose and persistence and elegance to the palate.
Winemaking:
Grapes were hand-picked in the early autumnal mornings, placed into small lug baskets and tipped directly into a press before being gently whole-bunch pressed up to a maximum of 0.6 bar or until a low juice recovery of 580 liters per ton was obtained. The juice gravity-flowed directly to barrel (no pumps were used at all) without settling. The unclarified juice had no enzymes or yeast added to it and therefore underwent spontaneous fermentation until dry, with malolactic discouraged. The wine rested in barrel for 4 months prior to judicious sulfuring and a further 7 months’ maturation in barrel before racking and bottling.

Villa Monti Chianti Superiore DOCG Organic is made from 90% Sangiovese, 5% Canaiolo and 5% Colorino.
Ruby red color, with delicious fruity and floral aromas, with a pleasant structure and tannic density, leading to a balanced and persistent finish.
The grapes are coming from Le Tire, Paradiso La Fonte parcels with good sun exposure that gives the wine a lot of roundness and juiciness.
