Kershaw Chardonnay Deconstructed Lake District Cartref CY96 is made from 100 percent Chardonnay.

Sourced from the western part of Elgin, known as the Lake District, this clone produces wines that are nervous, aromatic, elegant and sharp with slightly lower alcohol and finely balanced, the fruit profile being subtle with hints of citrus/orange peel and peach blossom and with time, some nutty elements. The Cartref soils, a mixture of decomposed granite, pebbles and quartz, adds delicacy and heightens the fruit intensity.

The inspiration for my Deconstructed Chardonnay stems from my belief that the Elgin region boasts credentials that make it world-class. To bolster these regional credentials, I have set out to prove that Elgin has both a signature grape, as well as specific ‘terroirs' (meso-climates) that reflect intra-regional distinctions. To fully comprehend this, it is necessary to dig deeper into the DNA that make up our region. To elucidate this, I have decided to make these 3 Chardonnay wines, each selected from a specific vineyard and an individual clone. Importantly, this is an ongoing story that will unfold over the coming years.

Laurent-Perrier Cuvee Rose Petal Jacket NV is made Pinot Noir from 10 crus in the Montagne de Reims

Marchesi Di Gresy Barbaresco Martinenga Camp Gros Riserva is made from 100 percent Nebbiolo.

Gorgeous scents of cherry, raspberry, rose hip and white pepper are augmented by leather, tobacco and chalky, mineral flavors in this detailed, complex red, which starts out fresh and inviting, before the dense matrix of tannins puts a lock on the finish. In the future it will come (more and more) from Morlet’s own new vineyard in Oakville—just across from To Kalon. A blend of 87% Cabernet Sauvignon and 13% Cabernet Franc, the 2016 Cabernet Sauvignon Coeur de Vallee has a very deep purple-black color and reveals compelling notes of minted blackcurrants, black cherries and wild blueberries with touches of sage, cigar box, tilled black soil and Indian spices with a suggestion of cardamom. The name de Compostella (meaning “field of stars” or “compilation of stars”) was chosen to reflect the fact that each component is crafted to stand alone as a world class varietal wine. Demoiselles Sancerre Blanc is made from 100 percent Sauvignon Blanc. 

The name "Les demoiselles" (translate as "The young ladies"), refers to the beautiful migratory birds (Cranes) that fly over the town of Sancerre twice a year (in the Fall going South to spend the winter in the African continent, and in the Spring going back North to spend the Summer in Northern Europe). These graceful birds offer a unique and impressive show when they sometimes land on the banks of the Loire River. The Fleuriet family wanted to highlight this exceptional grace and express an elegant and refined bouquet in this Sancerre Demoiselles cuvée.
The wine shows a bright yellow color with green highlights, a fruity nose with aromas of white flowers and acacia. Light-medium bodied in the mouth, supple and well structured, its concentration and crisp acidity make it a harmonious and food-friendly wine.

Pairs nicely with fresh goat cheeses, oysters with lemon, grilled lemon chicken breasts and Mexican dishes. Serve these whites at 46 °F (8 °C).

Pre-fermenting cold maceration for five days, alcoholic fermentation at 26-28 C to obtain color and structure. The Can Martí estate soils have been formed from sediments from the Garraf Massis, deposited thousands of years ago. One of the most characteristic features of the estate’s soils is the presence of accumulations of calcium carbonate.The movement of water through the soil dissolves the carbonates present and takes them to a certain depth. The continuous repetition of this process has ended up producing the accumulation of these deposits.When these become massive, after thousands of years, they bind together and and form a hard stratum called a petrocalcic horizon. This hard stratum limits the availbility of water to the vine and the production, but is a factor that gives the grape quality.

Straw yellow color, fine and constant bubbles, clean and bright, with golden reflections. The nose reveals a subtle aromatic intensity with fresh and sweet aromas. Honey flowers, citrus notes, white fruit, and balsamic herbs such as fennel.

In the mouth the acidity is well balanced, with delicate bitter notes to the finish and a set of ripe fruits and balsamic nuances.

Torello Corpinnat Special Edition Brut Reserve is made from 44% Xarel.lo, 37% Macabeo, 11% Chardonnay, 8% Parellada.

Weingut Prager Achleiten Riesling Smaragd is made from 100 percent Riesling. 

Franz Prager, co-founder of the Vinea Wachau, had already earned a reputation for his wines when Toni Bodenstein married into the family. Bodenstein’s passion for biodiversity and old terraces, coupled with brilliant winemaking, places Prager in the highest echelon of Austrian producers.

Smaragd is a designation of ripeness for dry wines used exclusively by members of the Vinea Wachau. The wines must have a minimum alcohol of 12.5%. The grapes are hand-harvested, typically in October and November, and are sent directly to press where they spontaneously ferment in stainless-steel tanks.

Achleiten sits east of Weißenkirchen and is one of the most famous vineyards in the Wachau. The steeply-terraced vineyard existed in Roman times. Some sections have just 40 cm of topsoil over the bedrock of Gföler Gneiss, amphibolitic stone, and slate. “Destroyed soil,” as Toni Bodenstein likes to say.

Austrian Riesling is often defined by elevated levels of dry extract thanks to a lengthy ripening period and freshness due to dramatic temperature swings between day and night. Wines from Achleiten’s highly complex soils are famously marked by a mineral note of flint or gun smoke, are intensely flavored, and reliably long-lived.

It needs some time to get rid of the stewed fruit flavors, though. Full-bodied, fresh and crystalline, this is an elegant, complex and finely tannic Riesling that needs some years rather than a carafe to polymerize the tannins and gain some finesse. At Prager, I could not determine that 2020 would be inferior to the 2019 vintage; on the contrary, the 2020 Smaragd wines fascinated me enormously in their clear, cool, terroir-tinged way. A 38% loss had occurred mainly because of the hail on August 22, although predominantly in the Federspiel or Riesling vineyards. There was no damage in the top vineyards such as Ried Klaus, Achleiten or Zwerithaler. "Interestingly, the vines are in agony for about two weeks after the hail. There was no more growth, no development of ripeness and sugar," reports Toni Bondenstein. The Veltliner then recovered earlier, while even picking a Riesling Federspiel in October was still a struggle. "Why Riesling reacted more intensively to the hail, I don't know myself either," says Bodenstein. Whole clusters were pressed to preserve acidity and to compensate for the lower extract, and compared to 2019, the 2020s were left on their lees longer. In June, however, the 20s in particular showed outstanding early shape.

Verdicchio is an historic wine that has been made since the 1400’s. There is an ancient bond between the Verdicchio vine and the region of Le Marche, a seaside province on the Adriatic sea, which stems from a cherished relationship with the Benedictine, and later the Camaldolese, Monks. The monks helped spread Verdicchio vines – which had been present for centuries – as well as viticultural-oenological techniques throughout the Marche region. The efforts of the monks, along with improvements in the quality of the vines & vinification methods, have allowed Verdicchio to thrive for centuries. At one time, Verdicchio measured 65,000 hectares (158,080 acres) of grapes throughout Italy.

Verdicchio means “little green one”, in reference to the grape and the color of the resulting wine. The Verdicchio grape – which also goes by Giallo and Turbiana (Lake Garda) – is grown across Italy, and it is closely related to Trebbiano and Greco. The grape is subject to mutations. 

The wine is refreshing, exhibiting lemon citrus flavors, aromas of flowers and apples, with herbaceous qualities.
