The Ferme Blanche Estate
Founded in 1714 by the Paret family. Cassis is the first A.O.C. white wine of Provence, established in 1936. One might say Cassis is a viticulture outpost, only 410 acres in size. Cassis historically has been expensive for a number of reasons:
because of its size, it has not attracted the negociants and, therefore, has no price supports.
there has always been a strong local market, especially in the area of the French Riviera and the restaurants in Cassis. Consequently, the wine is never cheap, but always delicious.
"The largest estate in Cassis; the Paret family continues the traditional reputation of Cassis for fresh white wines." - Anthony Dias Blue's pocket guide to wine 2006
The Ferme Blanche Vineyard
80% of the land is on slopes. The soil is a chalk and clay mixed. The family produces 70% white wine.
Long Shadows Pirouette Meritage is made from 58% Cabernet Sauvignon, 20% Merlot, 13% Malbec.
Philippe Melka, named one of the top nine winemakers in the world by Robert Parker, used small lots from Washington State's finest vineyards to craft this enticing red blend.
A variety of fermentation methods were used to enhance complexity and richness in this classic Bordeaux blend. Hand-harvested Cabernet was fermented in 400L French oak barrels that were gently rolled throughout fermentation to integrate the oak with refined, dark fruit flavors and give the wine its silky mouthfeel. All other varieties were fermented in traditional stainless steel tanks, with select lots enjoying longer skin contact to enhance the wine's dark color and mid-palate. The finished wine was aged 22 months in French oak barrels (75% new) before bottling unfiltered and unfined.
Review:
"The 2018 Pirouette checks in as 68% Cabernet Sauvignon, 22% Merlot, and 10% Petit Verdot aged 22 months in 85% new French oak. Deep purple-hued, it's a young, unevolved yet incredibly promising red with smoking good notes of ripe black and blue fruits as well as tobacco, graphite, and chocolate. Dense, full-bodied, and concentrated on the palate, it needs 3-5 years of bottle age but has the depth, balance, and class to evolve for 15-20 years or more."

"The 2018 Red Wine Pirouette blends 68% Cabernet Sauvignon with 22% Stone Tree Vineyard Merlot, and 10% Dionysus Vineyard Petit Verdot. The wine was aged 22 months in 85% new French oak prior to bottling. Aromatically beautiful, you are greeted to black rose petals and blackberry compote tones that mingle with wintergreen and chocolate covered espresso bean accents. Deep and concentrated in the mouth, with fantastic flavor density and tension, this finishes long with black fruits, loamy soils and minerals. Enjoy this texturally-beautiful Left Bank inspired Washington wine over the next twenty years to come. - Owen Bargreen"

Bavencoff Montagny Blanc is made from 100 percent Chardonnay.
A pale yellow color with discreet green reflections. On the nose, it develops delicate honey and vanilla aromas. On the palate, this wine is full-bodied, it offers a slightly oily texture typical of the great whites of Burgundy, rich and fresh flavors (vanilla, honey, golden apple, toast). The finish is long and mineral.
This wine goes perfectly with veal in sauce, scallops in butter and herbs, and most fish. Also to drink with hard mountain cheeses: Comté, Beaufort.

Grand Veneur Chateauneuf Du Pape Vieilles Vignes is made from 50% Grenache, 40% Mourvedre, 10% Syrah
Matured in concrete vats (40%) and oak casks (60%)
It boasts an inky/purple color in addition to a gorgeous perfume of crushed rocks, jammy black fruits, charcoal and graphite. Blackberry aroma with an air of dates pressed in alongside – this is sweet-noted. It is easy to appreciate, a sleek and stylish start. The palate holds excellent fruit that runs well and has kick. Its tannins move round freely and a minted finale comes forward. Its dark fruit is tasty, darkens on the finish, where tar and char from its oak enter. It is all very much together, a bundle of harmony, and will gain local attributes as it ages.

Review:
"The 2019 Châteauneuf Du Pape Vieilles Vignes is based on 45% each of Grenache and Mourvèdre, with the balance Syrah, all destemmed and raised in 55% new French oak. Gorgeous cassis, violet, graphite, fruitcake, and peppery herbs define this brilliant effort, and it's full-bodied, with a pure, seamless texture, wonderful tannins, and one heck of a great finish. This magical 2019 is going to benefit from 4-5 years of bottle age (it's brilliant even today) yet keep for 20 years or more. Châteauneuf du Pape lovers need to have this in their cellar!"
