This is a Traditional Method Vintage Sparkling wine. Grapes are coming from the region of Cassis, but this sparkling wine can't be classified as Cassis AOC as the AOC is strictly for still White, Rosé and Red.

A part is drawn off the skins with short maceration and the other part is from direct press. Fermentation in stainless steel at cool temperature. Bottling 5 months after harvest.

The Ferme Blanche Estate
Founded in 1714 by the Paret family. Cassis is the first A.O.C. white wine of Provence, established in 1936. One might say Cassis is a viticulture outpost, only 410 acres in size. Cassis historically has been expensive for a number of reasons:
because of its size, it has not attracted the negociants and, therefore, has no price supports.
there has always been a strong local market, especially in the area of the French Riviera and the restaurants in Cassis. Consequently, the wine is never cheap, but always delicious.

The Ferme Blanche Vineyard
80% of the land is on slopes. The soil is a chalk and clay mixed. The family produces 70% white wine.
M by Michael Mondavi Red Blend is made from 58% Cabernet Sauvignon, 30% Cabernet Franc, 5% Merlot, 5% Petit Verdot and 2% Malbec, Only 16 barrels produced.
M starts with Cabernet Sauvignon vines planted to Cabernet Clone 4 on 110R rootstock, which produces structured fruit with ample tannins and acid to balance the concentrated dark fruit flavors. In order to perfect his process, Rob Mondavi, Jr. consulted with viticulturist Danny Schuster to help unlock the secrets of his family’s Animo Vineyard. Linear and precise, the 2016 M by Michael Mondavi opens with expressive aromas of quince, plum, juniper, cassis, blackberry & dark roasted coffee beans. With time and swirls of air, notes of dried rose petals, coriander, cinnamon and clove develop. This wine enters the palate with subtle tannins at first, and soon broadens into a silky expanse of vanilla bean, cocoa, roasted dates, black cherry, and orange blossom tea. The evolution of flavors continues with candied figs, bramble-berry, and cocoa covered strawberries. Rombauer Vineyards Proprietor Selection Chardonnay is made from 100 percent Chardonnay.
Proprietor Selection is a reserve Chardonnay produced only in exceptional vintages by blending the best barrels from the finest lots. The 2020 represents the 14th vintage in 41 years. Like all of our Chardonnays, this wine comes from Carneros where the cool climate and clay soils offer ideal growing conditions for the varietal.
This wine comes from elite vineyards in the Carneros region owned by the Rombauer family and select growers including the Sangiacomo family, long-term grower partners who have farmed this land for three generations
A beautiful pale yellow, there are multifaceted layers of aromas including caramelized pineapple, lemon rind, baked green apple, toast, and vanilla. The densely concentrated palate features notes of powerful stone fruit, floral honey, baking spice, and vanilla, all building, with a fresh, mouthwatering acidity, to a long and lingering finish.
