Corne Loup Tavel Rose is made from 60% Grenache, 15% Cinsault, 10% Syrah, 15% mix of Mourvèdre, Clairette & Carignan
Elegant, refreshing, food-friendly and versatile, this Tavel offers mouth-watering aromas of strawberry and berry pie.
Corne Loup Tavel represents the pinnacle of the rose pyramid quality wise that can be achieved in the Southern Rhone. The town of Tavel has been famous for its rose wine since the time of the Popes in Avignon (1300's). Tavel is about 2,300 acres in size and produces about 500,000 cases yearly of 9 liter cases, plus can age for 2-3 years, unlike many other roses. Produced from a blend of Grenache, Cinsualt, Syrah, Mourvedre, Cinsault and Carignan, the wine comes from a famous sub-parcel called the Plateau de Vallongue between Tavel and Lirac AOC's.
The 20 hectare-vineyards are located in the hamlets of Oliver, Campet, Vestides and Vallongue. The Tavel from this producer is a blend of all 3 soils types you can find in the AOC:
Dry and lively, it is an ideal wine for barbecues as it makes a wonderful sipper that's also capable of matching with a wide variety of summer foods, including grilled chicken, seafood and summer salads
Mordoree La Remise Mordoree Rose is made from 40% Grenache, 30% Marselan (Marselan is a cross between Cabernet Sauvignon and Grenache), 30% Merlot

Mordoree Tavel Rose Les Vestides 2013 is made from 60% Grenache, 30 percent Cinsault, 10% Syrah
This wine is very similar in style to the Dame Rousse Cuvée. The main difference is that it is made from grapes not certified organic yet. The parcel is currently being converted to Organic after Domaine de la Mordorée acquired it in 2013. It will take 3 years total to become certified organic and it might be integrated in the Dame Rousse in the future.
The second difference is that the soil type is slightly different. In the Dame Rousse, the soils is composed of Quartz round pebbles on the Villafranchienne terrace of Vallongue. For the Vestides, the soils is made of flat limestome rocks, originating from the Berremien crumbled hill-stones.
Steady pink, brilliant and limpid color. Very complex nose with flowers, red and white fruits aromas. Round, full bodied with a long lasting aniseed and fruity finish.

The Mordoree Estate
This is arguably the top estate in our Portfolio. Domaine de la Mordoree (woodcock), located in the town of Tavel, in the Southern Rhone Valley, is the most consistent producer of top quality wine in my entire selection. In 1986, the brothers Christophe and Fabrice Delorme decided to dedicate themselves to their passion for wine. They started their own estate with the objective to produce the best wines in each appellation while preserving the environment
The Mordoree Vineyard
The vineyard consists of 55 hectares (135 acres), on 38 different parcels, which provide with a rich, wide range of soils and climates. The soil is a mix of clay, chalk and sand with pebble stones. The improvements at the Domaine have been incredible: new pneumatic presses, new stainless steel vats, new destemmer, new vinification and aging plant, and aging in oak barrels for the top wines. All the grapes are raised by culture raisonnée which is very close to organic viticulture (intervention in the vineyard only when necessary). The yield is reduced in the vineyard by ébourgeonnage (de budding in spring) and vendanges vertes in summer (green harvesting). Oak aging for the top wines in special barrels like “jupille” for 10 months. No expense is spared at this Domaine to achieve quality.
Betz Family La Serenne Syrah is 100% Syrah
La Serenne is the most reflective of the site/vintage dynamic of our three single-site 2012 Syrahs. Lovers of this wine know that its source, the Boushey Vineyard, is the highest altitude of the three vineyards and is typically the latest harvested. This cool site was accentuated by the cooler season and the results reflect the seriousness of this vineyard and its care.
An extraordinary, nearly impenetrable black purple color leads to a concentrated, inky aromatic impression: smoky black cherry and wild blackberry dominate, but a litany of supporting aromas is already emerging: smoke, violet, mushroom, roasted meat, Chinese 5 spice and minerals. It has a full attack on entry and a big, rich mouthfeel that goes on and on.
2012 is our 13th harvest from this site and these rows. We continue to be impressed with the chameleon nature of this vineyard, in cool years and hot, in heat spikes and cool springs: it provides us with surprises and opportunities at every harvest. While the themes of deep black fruits and pliant structure always surface, the nuance of this vineyard and its care (thank you, Dick Boushey) make it some of the most satisfying fruit we work with every harvest.

The grapes are harvested very early in the morning to maintain freshness, the alcoholic fermentation occurs at 14-15°C. When the alcoholic fermentation finishes, one part of the wine is kept on a pump-over programme. Once the wine has been blended it is clarified, then undergoes cold stabilization and then later filtered through soil. On the bottling line it is filtered again through a sterile sheet and a membrane to ensure that it is micro-biologically stable.
Serve with shellfish, fish and sushi.
