Eikun sake uses water from a source called "Fusui", rated as one of the top 100 sources of water in Japan. This water source is located just south of the ancient Japanese, and still cultural capital of Japan, Kyoto.

Hiyaoroshi is a general term referring to sake that has been pasteurized once in the winter and then allowed to mature over the summer before distribution in autumn. The Japan Sake Brewers Association designates September 9th as the official start for Hiyaoroshi sales. (Essentially aged Namazume)
September 9th is known as Kiku-no-Sekku (“Chrysanthemum Festival”), where hundreds of chrysanthemums are displayed around various venues and chrysanthemum sake is served. The chrysanthemum (kiku) was brought to Japan from China during the Nara period. In 1183, it was adopted as the Imperial Seal of Japan, and during the Meiji period no one but the Emperor could use it. Nowadays it still represents the authority of the emperor and you can see it everywhere in Japan.
Aromas are forward, fresh, and fruity in the nose with notes of sweet melon, cherries, and hints of vanilla. Flavors on the palate evoke feelings of the season with pumpkin pie, roasted nuts, and stewed plums. This sake is medium-bodied and accented by medium acidity, showing classic Jozen minerality and a lingering dry finish. Additional 7 months of aging adds depth and roundness.
{Pairs with roasted poultry, baked ham, butternut squash ravioli, BBQ, and dishes with sweet spice.

The Horan Shuzo Brewery
Horan Shuzo was founded in 1881.
It is located in the town of Takakuotsu (10 miles north of Otawarachi and 5 miles north of Nasushiobara) in the Tochigi Prefecture.
Food and Sake:
KanpyŠis a well-known Tochigi product, made from a gourd called yūgao (夕顔, lit. "evening face"). The gourd is thinly sliced and dried, then reconstituted in water when used. The end product is a brown pickle-like substance, perhaps most often encountered as a filling in sushi rolls. Tochigi produces 90% of Japan's kanpyŠand is also Japan's largest producer of strawberries.
Gyouza is a famous food in Utsunomiya, Tochigi. These are dumplings with a variety of ingredients, most commonly garlic and pork. There are a lot of tasty Gyouza shops in Utsunomiya. You can enjoy not only yaki-gyouza (pan-grilled) but also age-gyouza (fried) and sui-gyouza (steamed). Tochigi is the prefecture which consumes Gyouza the most in Japan.
Tochigi Wa-gyu is Japanese raised beef. This is a pricey marbled-fatty beef that can be served as (among others) steak, hamburger, thinly cut for sukiyaki or shabu-shabu dishes and well revered by locals.
Soba and udon Soba is noodles made from buckwheat and other grains. Handmade soba or udon (thick flour noodles) are served in soup bowls with local vegetables and meat or dry with sauce dip on the side.

This inviting Honjozo is full of floral, quince, dried mango, anise and hazelnut aromatics. On the palate this sake has medium body and a smooth mouth feel. Forward flavors of persimmon and black pepper with lively acidity gives this sake a beautiful balance.

Pierre Olivier Sparkling Rose NV is a value sparkling rosé, made with Tempranillo grapes from around the French/Spanish border (next to the Pyrenees). This is a new Kysela Project.
This wine is aromatized with a very little amount of Raspberry flavor, giving a nice mouthfeel, with an extra aromatic boost.
The bubbles are obtained using the Charmat method, named after Eugene Charmat, where the second fermentation takes places in a large, closed pressurized tank. It is different from the Methode Champanoise as the secondary fermentation doesn't take place in the bottle.
"Pale pink salmon. Just a touch off-dry, this is a very pleasant sparkler that reveals aromas of spicy red apple with a hint of cinnamon that carry through to the palate. Well made and exceedingly pleasant to drink."

Vintage Report
A majestic vintage where structure, elegance and freshness combine to form something special. 2015 was a hot and dry year with constant warm temperatures from May through August which permitted the production of perfectly ripe, concentrated grapes. At the beginning of September the “tramontana” a wind coming from the north, refreshed and restored the plants before the final phase of maturation, which was characterized by significant day-night temperature, typical of our high-altitude vineyards.

The 2015 Brunello di Montalcino Riserva is a truly majestic wine. The bouquet is packed with intense fruity notes of black berries, pomegranate and plums, intertwined with scents of Mediterranean herbs such as thyme, rosemary and sage, rising from a carpet of forest floor. On the palate, the wine seduces with exuberant charm and caressing sweetness. The youthful tannins reveal its immense structure and contribute to creating a distinctive sensation of freshness which leads us towards a long-lingering, savory finish.
Review:
The Biondi-Santi 2015 Brunello di Montalcino Riserva is initially a reticent wine and one that does not immediately subscribe to the overstated abundance and exuberance of the vintage. Give it time. I wrote this review after several tastings over several days so I could ensure a more accurate account of the wine's elegant reveal. Contemplative and exceedingly nuanced in personality, with wild berry, underbrush, ferrous earth and candied orange peel, this has everything to look forward to in terms of its future evolution in the bottle. It displays a pretty ruby color that borders on garnet and polished copper. A silky, mid-weight palate is accented by beautifully managed and silky tannins (this aspect of the mouthfeel is extraordinary), bright freshness and long-lasting fruit momentum. The alcohol is a bit more powerful in this release (at 14.5%), but the effect is supple and smooth nonetheless. I tasted bottle number 256. Tenuta Biondi Santi does not usually release bottle production numbers, but I can confirm that 2,000 bottles of the 2015 Brunello di Montalcino Riserva are earmarked for the United States market.

Review:
The Cabernet Sauvignon, Petit Verdot, Malbec, and Caber- net Franc grapes in this wine were grown in gravelly, lime-laden soils at an elevation of 1,700 feet. Once drawn in by its immediate perfume of dark chocolate and blueberry preserves as well as its silky, plush, mouth-coating texture, you're treated to waves of milk chocolate covered boysenberry. Nutmeg-dusted cedar and dried violets flash across the palate, leaving behind a slightly chalky finish
