Dark red with a hue of purple. The estate-grown 2016 Cabernet Sauvignon Mon Chevalier is a blend of 94% Cabernet Sauvignon, 4% Cabernet Franc, 1% Malbec and 1% Petit Verdot. Very deep purple-black in color, it charges forth with intense notes of crushed black cherries, black berry preserves and cassis scents with touches of spearmint, Indian spices, espresso and dried lavender plus a waft of roses. Full-bodied, the palate reveals incredible restraint, slowly revealing earth and black fruit layers framed by firm, grainy tannins and just enough freshness, finishing very long and spicy.

TASTING NOTES

The 2018 Snake Oil has a beautiful deep and rich ruby color. On the nose, there are pleasant complex aromas of earth and spice with notes of warm chocolate mocha. Hints of blueberry, black cherries, and berry cobbler immediately scream from the glass. This wine has muscular tannins that grip at the beginning and linger to a beautiful silky long finish. Although graceful now, you can cellar for 10 to 15 years.

VINEYARD NOTES

The historic Priest Ranch is now part of the Somerston Estate, a significant property totaling 1,615 acres, with 222 acres planted to hillside vineyards. Dramatic elevations of the vineyards define and distinguish the estate, ranging from 800 ft to 2,400 ft above sea level. In 2018, the grapes for this wine were chosen from three hillside blocks - Block 56, Block 58 and Block 98.

Deep garnet-purple in color, the 2018 Cabernet Sauvignon Snake Oil needs a little swirling to reveal emerging notes of freshly crushed blackcurrants, blackberry pie and mulberries plus suggestions of tilled soil, cedar chest and Indian spices with a touch of roses. The full-bodied palate completely coats the mouth with opulent black fruit preserves and exotic spice layers, supported by velvety tannins and lovely freshness, finishing long and perfumed.

WINEMAKING

Our 2018 Snake Oil was handpicked, sorted, and fermented naturally, then aged for 24 months in 75% new French oak barrels and 25% once-used French oak barrels.

HARVEST NOTES

The early half of 2018 brought us moderate temperature allowing for a long growing season. We had a majority of our rainfall in February followed by a mild Spring. Then summer brought consistent temperatures with little heat spikes. This weather allowed for longer hang time and for the fruit to ripen at a slower rate. The 2018 harvest at our estate began in late August and resulted in exceptional quality.

HELENA DAKOTA VINEYARD

This sloping, 12-acre vineyard runs southwest to northeast at roughly 750 feet above sea level. It features soft, reddish brown, gravelly, silt loam soils speckled with rocks. Prevailing westerly winds blow over a large pond and continue uphill parallel to the rows of vines. These cooling breezes slow the ripening process creating wines that are both powerful and balanced with red fruit flavors, notable minerality and graceful tannins. Pierre says the Cabernet from Helena Dakota remind him of Pauillac or Saint-Estèphe.

Fragrant, opulent, and complex, bursting with fresh blueberry and black currant, Crème de Violette, and subtle fresh bay leaf aromatics. The palate is luxurious and rich, perfectly balancing this wine’s firm structure.

The 2019 Cabernet Sauvignon Helena Dakota Vineyard explodes with violets, aniseed and cast iron, with a deep core of crushed blueberries and black cherries, evolving continually with each approach to the glass. The first impression of the nose is earthy with notes of cypress, vanilla bean, and spice. This Merlot-led blend is sourced primarily from the Valadorna and Capraia blocks, which produce the estate’s most complex and mineral-based expressions of this variety. The blocks are located within the cooler part of the estate, naturally irrigated by the stream that undulates through it, and feature sandy brown soils and lower yields than typical. These blocks are often the last Merlot blocks to ripen on the estate.

Solid and radiant in the glass it shows notes of pink grapefruit, flowering geraniums, pressed blueberries, plums and rosemary. There is more in the background in the brightness of the lemon, lime and bergamot notes. Full body, well-polymerized tannins that are decidedly vibrant and tense at the moment and an impressive long finish that will relax over time. Better from 2024.

An extremely fine and grouped effervescence. The dress is crystalline, luminous, and slightly golden. The nose is fruity, fresh, and tangy. Both greedy and elegant, it expresses pastry notes and aromas of fresh fruit: nougat, frangipane, candied orange, and mirabelle plum. A delicate note of passe-crassane pear carrying a touch of Williams pear liqueur can be guessed. A tonic wine, with a nice tension around the aromas of fresh fruits. Since its inaugural vintage in 1978, Rubicon has been the Estate's premier red wine, reflecting the soul of the property and expressing Francis Coppola's wish to create a Bordeaux-styled grand wine, that is, "a wine that can please contemporary taste, but with a historical aspect [that defines] our vineyards at their zenith."

Rubicon was named after the small river crossed by Julius Caesar in 49 B.C., declaring his intention to gain control of Rome, thereby launching a civil war among opposing factions. Over time the phrase "crossing the Rubicon" has come to signify any irreversible action with revolutionary intent or the outcome of which holds great risk. True to its uncommon depth, Inglenook's Rubicon continues to be a testament to the finely tuned rendering of a risk well-taken.

2016:

After four years of drought, a winter with average rainfall was welcome, as it provided ample soil moisture for a strong start to the 2016 growing season. Average late-spring temperatures and limited precipitation minimized the risk of frost during mid-May bloom, ensuring average yields. June closed with a heat spell, slowing vine canopy growth at the ideal time. Harvest of the blocks contributing to the 2016 Inglenook Rubicon blend occurred under optimum conditions from September 6th through September 27th.

Ideal harvest conditions endowed the 2016 Rubicon with the three elements associated with a truly great wine from the Rutherford appellation: complexity, balance, and elegance. The aromas are intense and focused with top notes of creamy, sweet vanilla, and black licorice wound around a core of exquisitely ripe black cherry and crème de cassis. This refinement extends directly to the palate, where the wine is both broad and deep with sensuous, silky tannins. Supremely balanced in terms of both opulence and complexity, ripe black fruits and an ultra-smooth texture provide an impressive crescendo to a very long finish.

The 2016 Cabernet Sauvignon Rubicon is a wine of total precision and class. Translucent and energetic, with distinctly mid-weight structure, the 2016 is a wine of reserve, tension and breeding. Shy at first, the 2016 has a lot to offer, but it needs a number of years in bottle to be at its most expressive. Cedar, tobacco, licorice and wild cherry add the closing nuances.

Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Petit Verdot and Malbec add structure, color, and a component of bright fruit. The hand-harvested grapes were held separate at harvest and berry-sorted into six-ton open top tanks for fermentation. Maceration took place on the skins for five days, before early pressing to achieve ideal tannin extraction. Aged 19 months in 100% new French oak from coopers Nadalie and Sylvain.

The nose on this luxury-level bottling is pure and refreshing, offering aromas of black cherry, loamy soil, dried mint and caramel-laced coffee. The feel in the mouth is very delicate and fresh with candied lemon and fresh hazelnut aromas. The palate is silky and mineral with notes of honeysuckle, flaked almonds and clementine.

This is really something. Electric on the palate. The aromas are so complex with sliced fresh and dried ginger, subtle pie crust, tarte tatin and hints of nutmeg with some salted caramel. Toasted bread, too. Always subtle. The palate is full- to medium-bodied yet hemmed-in with a freshness and balance that draws you back. Savory and vibrant. It's full of energy. Spectacular. About the Vineyard

Vineyards in Tabuenca and Borja, planted with indegenous clones of Garnacha starting in the 1920s.

Wine Production

The selected highest quality grapes are placed into small stainless-steel tanks of 7 tons capacity. The must is basket pressed and fermentation is finished in new French and American oak where it complets the malolactic fermentation. Wine is aged in the barrels for 24 months before bottling.

Boroli Barolo Brunella is made from 100 percent Nebbiolo.

A clear ruby red color, with very light orange reflections. A net aroma in which liquorice stands out at first, immediately followed by a fruity scent; the aroma makes you scent it again and again to discover different and pleasant facets. Brunella is distinguished by a careful selection of grapes, perfect destemming, long macerations with submerged cap. The barrels for Brunella are specifically chosen by the winemaker.

Wine Production

Brunella is one of the most historic single vineyard sites of all of Castiglione Falletto, however it hasn’t ever been bottled singularly under the Menzione Geografica Aggiuntiva BRUNELLA until 2013. The Brunella vineyard occupies the western crest of the Villero hillside and complete surrounds the Boroli winery. The vineyard is a monopole—owned entirely by Boroli and is the most prestigious wine in the lineup. As it occupies the best exposed section of the Villero hillside, La Brunella expresses power, drive, complexity, and extraordinary length and ageability.

About the Vineyard

The Boroli family is a family of entrepreneurs, with roots in Piedmont dating back to 1831. The family started their winemaking business in1997, when Silvano and Elena Boroli felt an ardent desire to step away from the pressures of their publishing business and reconnect to nature. Silvano and Elena grew the company until their son, Achille, stepped in to run the wine-growing and production business in 2012.

With the 2012 grape harvest Achille decided to radically change the methods used in vineyards and wineries, aiming for the highest quality in Barolo and its crus. He cut production levels, updated the winemaking technology, and focused on low intervention methods to raise the quality of the Boroli wines be on par with the finest Barolo wines.
