The wine displays an exotic nose with a touch of smoke and licorice. On the palate, peach and watermelon dominate with citrus zest and chalk notes.
Aged on the lees for a few months (no oak). It goes well with seafood, fish, goats cheese.
Thomas Sancerre Blanc Cuvee Terre Blanche is made from 100 percent Sauvignon Blanc.
A typical Sancerre with citrus, honey, and flint notes, supple and fragrant. The palate is fresh, with grapefruit and lemon flavors and a pleasant minerality throughout.
Thomas Sancerre Blanc Terre Blanche was fermented in part Oak foudre (Cuve tronconique) and part 400-liter oak barrels for 18 Months.
Pair with grilled fish with lemon sauce, caesar salad with chicken as well during the spring or summer time.

A Sancerre fermented and aged in amphorae, straw-colored, with full aromas and a beautiful complexity: grapefruit, honeysuckle, orange blossom and a pinch of curry. A fine sweetness coats an expressive, dynamic and juicy mouth, with a zesty accent. Complete, persistent, its place is at the table, on fish with fennel for example.
A pure expression of Sancerre’s classic terroir. Grown on the appellation’s prized Caillottes soils — shallow, stony limestone mixed with gravel — this Sauvignon Blanc delivers exceptional elegance and vibrancy. The well-draining stones promote deep rooting and early ripening, yielding a wine with bright aromatics of citrus, white peach, fresh herbs, and wet stone. Crisp, lively acidity and a refined, mineral-driven finish make this the quintessential Sancerre — refreshing, aromatic, and perfectly balanced. Terroir (soil type) is a blend of "Caillottes" and "Terre Blanche".
Everything is machine harvested (which means it is 100% destemmed).
50% Direct press + 50% Saignée (bled) with 12-24 hours of skin contact maceration.
The alcoholic fermentation is done in temperature controlled stainless steel tanks.
Right before bottling, the wine is fined with Bentonite (very light filtration with oenologic clay).
Tasting Notes:
Light, bright pink. Redcurrant, strawberry and chalk on the nose, with a touch of singed orange gaining strength with air. Dusty red fruit and citrus flavors are braced by tangy minerality, which adds lift and cut. Uncompromising in the best way, finishing with excellent clarity and echoes of lemon and orange zest.
Food pairings:
This is a very versatile wine. You can have it on its own in the summer time as an apéritif. But it is also excellent with Hors d'Oeuvres and terrines. It will compliment any white meat dish and poultry. You can also enjoy it with salmon or exotic food (slightly spicy sushi).

The Domaine Michel Thomas Estate
Michel Thomas and his son Laurent took over the estate in 1970 from Michel's father, who started in 1946. The total production is about 10,000-12,000 cases per year. They export 65-70% of their production, mainly to Japan and Russia.

Today they farm 40 parcels located in four villages, totalling 17 hectares (42 acres): 11 hectares Sauvignon, 6 hectares Pinot Noir. Schwarz The Schiller Shiraz is made from 100 percent Shiraz.
The Schiller Shiraz is a wine rich in both flavor and history. The 400 Shiraz vines planted by Carl August Otto Schiller in 1881 are something to be treasured. Earmarked for bulldozers in 2006, a last minute reprieve would see these Ancestor vines remain in the ground. The grapes are hand-picked from the sixth generation Schiller family vineyard at Hallett Valley in the Barossa. Jason first made this wine in 2008, and since then it has been his flagship wine.
Opens quickly to luxe fruits, black plum & fruits of the forest, building in layers of toasty smoked bacon, tobacco leaf and Mediterranean herbs with nuances of spice and earthy tones. A luxurious palate of old vine fruits, savory overtones and fine slippery tannins. A long harmonious finish.

A co-fermentation of Dijon clones 113, 667, and 777, this wine expresses the volcanic soils of the Dundee Hills elegantly, yet powerfully. Upon arrival, the grapes were immediately de-stemmed into an open-top two-ton fermenter. Following a seven day cold soak, the wine started fermenting slowly at a cool temperature. To manage extraction, we utilized one to two punch-downs and one pump-over per day, with two rack-and-returns at the beginning and middle of fermentation. As fermentation neared the end, the must was heated to achieve a peak temperature of 94° F resulting in optimum extraction, and then we immediately chilled the wine to extend the time on the skins, while switching to one pump-over per day to limit harsh, seed-tannin extraction. After a total of 19 days on the skins, we drained and pressed the wine, keeping the free-run and press fractions separate. This bottling contains only the free run fraction. Following two days of settling, the wine was racked to barrel and aged for 11 months in 25% new French oak and one month in tank prior to being bottled unfined and unfiltered.

Vivid red. Displays fresh red/dark berry and pungent floral aromas, along with suggestions of cola, mocha and five-spice powder. Appealingly sweet and energetic on the palate, offering intense black raspberry, cherry-cola, spicecake and rose pastille flavors that tighten up slowly on the back half. Fine-grained tannins frame the well-defined finish, which lingers with impressive, red fruit liqueur-driven persistence. The Grade Napa Cabernet Sauvignon Winfield Vineyard is made from Napa Valley Cabernet Sauvignon.
“2016 produced wines that are very giving, round, coating and streamlined. Year after this year, this bottling aims to highlight the best attributes of the Winfield Vineyard, and also creates a wine that possesses qualities that allow it to age well in the cellar and evolve over many years.
“This wine expresses a focused balancing act of dark, rich black fruit, and a fine tannin structure, illuminated through the core with a laser-like acidity. The wine displays a deep purple-red hue with a cranberry halo. Aromas of cassis, cinnamon, citrus oil, roasted meat, and lilac swell from the glass.
“The palate is marked by a wave of jet-black brambly fruit up front, followed by an exotic spice mid-palate and a long, complex finish that lasts and lasts expressing notes of flowering jasmine, and oolong tea. J. Lohr Signature Cabernet Sauvignon was first produced to honor the 80th birthday of founder Jerry Lohr. This limited release was specially selected and blended from the exceptional 2016 vintage in Paso Robles. It is both a tribute to Jerry's pioneering efforts in the region and our red wine portfolio's ultimate expression of Cabernet Sauvignon. VINEYARDS & CELLAR Beck Vineyard, in the Creston District of Paso Robles, is a unique, high elevation site that sits at 1,700 feet above the early morning fog line. Its calcareous soils and cooling afternoon winds are perfect for growing Cabernet Sauvignon. The Cabernet from this vineyard ripens early with excellent color, purity of fruit, and phenolic maturity. Incorporation of Cabernet Franc brings freshness to the blend, while the rare Bordeaux variety, Saint Macaire, brings density and a savory character. Petit Verdot and Malbec add structure, color, and a component of bright fruit. The hand-harvested grapes were held separate at harvest and berry-sorted into six-ton open top tanks for fermentation. Maceration took place on the skins for five days, before early pressing to achieve ideal tannin extraction. Aged 19 months in 100% new French oak from coopers Nadalie and Sylvain.

Domaine Jean Grivot Nuits-Saint-Georges Premier Cru Aux Boudots is made from 100 percent Pinot Noir.
Domaine Jean Grivot is among the great names in Burgundian wine. Étienne Grivot and his wife Marielle took over from Étienne’s father Jean Grivot in 1987. The vineyards are densely planted and farmed organically “sans certification” while the aim in the cellar is for balance and clear expression of terroir.
Jean Grivot’s 38.3 acres spread across 22 appellations with vineyards in the communes of Vosne-Romanée, Vougeot, Chambolle-Musigny, and Nuits-Saint-Georges. Besides the three grand crus, there are 8 premier crus including the much lauded Les Beaux Monts and Suchots in Vosne-Romanée. The grapes are completely de-stemmed and fermentation is spontaneous.
Nuits-Saint-Georges Aux Boudots 1er cru lies in the “Zone Vosnoise” or northern end of Nuits-Saint-Georges just below Les Damodes. It borders Vosne-Romanée Aux Malconsorts 1er just to its north. Its position slightly lower on the slope with deep soil full of pebbles results in a richer and fuller wine.
The grapes are destemmed and maceration à froid usually lasts just a day or two. The alcoholic fermentation is spontaneous and malolactic fermentation occurs in barrel. Depending on the vintage, the proportion of new oak is around 30-60% for the premier crus.
The wine shows aromas and flavors of red berries, herbs, and purple flowers. The palate is rich with ripe fruit and medium weight with bright acidity and fine tannins. Aging in 30-60% new Burgundian pièce brings notes of vanilla, toast, and baking spices.
Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.

A wine with the substance and structure to support the generous lashings of new oak used for maturation, and the overall effect is elegant and classic in style. Aux Boudots, where Grivot has 0.85ha, is at the northern edge of Nuits, just over the border from Vosne-Romanée Malconsorts. They began to pick on the 3rd of September – Etienne specified that they are very particular that the tannins are ripe and do what they can to prolong the vegetative cycle. Still, the grapes were picked with an entirely correct pH of around 3.4.

Opus One 2022 exudes charm and sophistication from the glass. Primary aromas of blueberry, cassis, and dried rose petals with underlying notes of olive, cigar box, and graphite create a rich and inviting bouquet. On the palate, bright red-fruit flavors, cocoa, and fresh orange peel waltz together into a harmonious and balanced profile. Chocolate, cherry and rose petal aromas on the nose. Very open and alive - this has a great energy from the aromatics alone with soft cedar shavings, vanilla bean and bramble fruit. Juicy and lively, this is full of fun - fruity and concentrated. The tannins are just wonderful, creamy and slightly grippy, extending the flavours vertically. Tons of juicy, succulent fruit - this feels quite modern but still with that flash of sunshine and ripeness. Long lasting with purity and delicacy that make it so enjoyable. A wonderful creation from Michael Silacci. This is not your typical blockbuster at all, this is a darling of a wine. 0.5% Malbec completes the blend. The Opus team chose to pick early and quickly given the heat spikes in 2022, starting with the Merlot on 24th August. Ageing 18 months in French oak.
