Our winemaking "style" is solely determined by this place or terrior we call "Paradigm." Winemaking is agriculture when you own your vineyards and are able to farm them to promote the very best Earth will give you. All of our selections of wines are made from five varietals on the estate. Every wine is 100% farmed and grown by us.

Complexity in our wines supported by luscious fruit and acidity is our hallmark. Our efforts during harvest and barrel cellaring concentrate on maintaining the freshness from the first day we handpicked each vineyard block. Simple winemaking protocols are employed while crucial “timing” oriented winemaking decisions rule each day.

Winemaking: This wine is a classic Bordeaux blend of 78% Cabernet Sauvignon, 10% Malbec, 8% Merlot, 2% Cabernet Franc, 2% Petit Verdot.

. The 2010 growing season was moderate, thus promoting slow ripening and full flavor development. We hand-harvested and fermented each variety separately, then moved the wines to barrel, where they aged twelve months. Once we determined our blend, we returned the wine to barrel for an additional twelve months, to 'marry' the varietals. We used tight-grained French oak barrels (45% new) from coopers Taransaud, Vicard and Bossuet.

Winemaker Notes:

Complex, rich aromas foretell rich flavors of black currants, allspice and a hint of clove. The wine is full bodied, with velvety texture, smooth tannins and an extensive finish. Beautifully balanced, this Cabernet will age for ten more years.

Alcohol: 14.25 percent by volume

"Savory, dried red capsicum with cedar, cocoa powder and dried mushrooms on top of black cherries. Juicy and layered with some currants and savory earthy spices on the palate. Our Tenma Vineyard is located in the foothills of Mount St. Helena northeast of the town of Calistoga. For this Ghost Block Cabernet Sauvignon, 2020 was a year of low yield and high concentration. The Spring was very dry, and the summer had several heat spikes, leading to small berries and an early harvest. The Ghost Block Vineyard was harvested on 9/12, two weeks earlier than usual. A supreme representation of Cabernet Sauvignon made by Kristi Koford with gorgeous fruit aromas of Black cherry, blackberries, black currant, and hints of cloves, licorice, vanilla, chocolate, and mocha give an extraordinary complexity framed by a firm but polished texture of fine grain tannins with the persistent acidity that elevates the experience. The origin of Lot C-91 began in the fall of 1969 when Joe Heitz created this one-off cuvée, which was very normal in those days, as a more premium version of his already iconic Napa Valley Cabernet Sauvignon bottling. Joe envisioned Lot C-91 as a greater step up in quality from the Napa Valley Cabernet Sauvignon, with a higher quality of fruit sourcing, coming exclusively from the sought-after single vineyards of Heitz Cellar.

Lot C-91 is the culmination of 50 years of tireless effort, trial and error, and the continual desire to make a unique expression of the heralded vineyards of Heitz Cellar.

Wow. Such a racy and exciting nose! This is quite agile and nimble, full of red and blue berries in the forefront, then complemented by spiced orange, earl grey, red plums, potpourri, savory plums and chocolate. Tense and elegant on the palate, which is all about succulent red berries, nuance and texture. Nothing redundant here. A great Napa cabernet sauvignon that has real definition. A beauty by all accounts!

In 1969, Heitz produced a one-off cuvée called Lot C-91. It was thought of as an elevated version of the Napa Valley Cabernet – a 'best of the best' blend from sites throughout Napa. After a bottle of the '69 turned up and turned heads at a Heitz wine dinner, the winemaking team decided to produce a modern iteration. It's comprised of vineyards in four AVAs: Rutherford (34%), Oakville (34%), Howell Mountain (17%) and St Helena (15%). The dazzling nose instantly shows off the component from Martha's Vineyard and on the palate it walks the line between succulent, powerful, herbal and floral, showing none of the heat of the 2017 vintage. As of June 2020, this was still a barrel sample, while many Napa 2017s are already on the market.

This wine has a very pretty fruit-forward nose filled with plummy sweet tarts, cherry compote, cocoa nibs, hard candy, cedar box, and allspice. The entry is fresh and clean with a core of delicious generous fruit. It has a lovely elegant texture, weighty middle and resolves into a mocha filled finish.

Keermont Cabernet Sauvignon 2020

Keermont Cabernet Sauvignon grows in Keermont's Cottage Lane Vineyard on the mid-slopes of the Helderberg. This vineyard is situated on the crest of a ridge (320m above sea level) so has aspects ranging from East through North to West. It is very exposed resulting in small vines with low yields. This has allowed to make a relatively fine grained Cabernet, but the clay soils translate to a wine with power, tension and fresh acidity. They blend in a couple of barrels of other varieties to add to the complexity of flavor and tannin structure.

All grapes used in producing the wines are grown on Keermont Vineyards. Most of the vineyard parcels grow on deep red clay rich soil derived from sandstone and granite and are surrounded by indigenous ‘fynbos’ vegetation. The vineyards are planted on steep mid-slopes high up in the valley between the Stellenbosch and Helderberg mountain ranges. Aspects vary from North East through North to West facing between 250 and 400 meters above sea level.

Dark ruby red in color, this is quite a serious vintage with a complex bouquet of ripe red berry fruit, cedarwood, and typical ‘fynbos’ flowers. The palate is full bodied, but gentle. Tannin structure is full and dense and coats the palate while the natural acidity keeps the ripe fruit in check. Savory notes of tomato paste and cloves add character to the bright red strawberry and cassis flavors which linger into a long, tight finish. Drink 2020 – 2035.
